Why am I exhibiting this recipe now that the cherry season is over? Because the recipe is so amazing that I didn't dare to publish it without trying it. A neighbor, Maria Dmitrievna Bondarenko, taught me how to make wine from cherries - a clever, beautiful and good person.
Pour the sorted out to the shoulders into a 10-liter bottle (the fruits must be ripe, but not overripe, and God forbid, if you get rotten or moldy - this will certainly worsen the taste of the finished wine !!) and washed cherries. Pour granulated sugar on it to the top of the balloon, tie it with a canvas rag and leave in the sun for 3-4 weeks.
After this period, drain the resulting liquid through the leaky lid and hide it away, and in the jar, without removing the cherries, again pour those fruits or berries to the shoulders that have ripened by that time; usually it is cherry plum, preferably red. Add 1.5 - 2 kg of sugar on top (depending on the sweetness of the raw material) and, if it is not too juicy, pour half a liter of clean water. Tie again with a canvas and leave for another 3-4 weeks in the sun.
Drain the resulting liquid and mix with the first. Filter. The wine is ready.
At first I didn't quite understand why to put the second time - maybe for quantity? .. Or is it a pity to throw away the fermented cherries? .. But, having drained the first wine, I understood the reason: it is thick, heavy, very sweet and strong. I tried a glass - it became noticeably prettier ... After mixing it turns out just right - very, very tasty and aromatic.
And beautiful.

It is ideal to put wine on a growing moon when it is in the sign of Gemini, and to pour it with a flawed moon in the signs of Aries, Leo or Sagittarius, then it is better and longer stored. If the wine is put on decreasing, then the fermentation time can increase up to 6 weeks. Neither put nor pour wine when the Moon is in the signs of Cancer, Pisces and Virgo; also these days it is impossible to roll up, ferment and canning: the finished product will mold, "explode" or turn sour.

The miracle of this method is precisely in the fact that no fuss is needed - neither filtering, nor monitoring the amount of water on the shutter, nor the tightness of the shutter. And if you fail to keep track - the wine can become moldy ... I have not put any wines! Even from a watermelon.
Only the living sun makes this wine from living cherries.

bagiraSochi, last year I put everything as I described it: I went through and washed the cherries, poured them into a 10-liter bottle, covered them with sugar, tied them with a handkerchief and left them right in the sun, just covering them from the rains. And further in the text. It turned out very, very tasty! Try it too, don't be afraid. As for 3-liter cans, I absolutely cannot explain anything: I did it only using this technology. Maybe the volume of a 10-liter bottle makes sense and a necessary condition. And transparency, in my opinion, is also necessary for the sun to touch the fruits. And, in any case, not a plastic container! This is wine, not vinegar. We sell 10-liter cylinders in hardware stores at very low prices - see if you have one.
