Cheese and carrot soup

Ingredients

carrots 600gr
bulb 1
red bell pepper 1
light processed cheese 100gr
clove of garlic 1
parsley, salt

Cooking method

  • Peel vegetables, chop coarsely and boil in salted water without boiling. Cool slightly, put vegetables in a bdender, add a glass of vegetable broth, garlic, melted cheese and grind everything to a puree consistency. Transfer back to the saucepan, stir with the remaining broth, bring to a boil and pour into plates, adding a little finely chopped parsley to each plate.

It prepares quickly, only about 30 minutes are needed. The broth I have left, it would be very thin soup if we put all 1.5 liters.
