Stuffed zucchini and eggplants on a vegetable cushion

Ingredients

zucchini 2 pcs
eggplant 1 PC
minced pork 400-500 g
rice (cooked) 2-3 tbsp
walnuts 20-30 g
cream cheese (Philadelphia) 1 tbsp
bulb onions 2 pcs
garlic 2-3 cloves
Sweet pepper 1 PC
tomato juice 100 ml
tomato paste 1 tsp
salt, pepper, sugar taste
cream 33% fat 100 ml
dry basil 0.5 h l
jusai (optional) quarter beam
olive oil and butter for frying

Cooking method

  • 1. Wash the courgettes and eggplant, cut into pieces 5-6 cm high and remove the pulp so that "cups" are obtained. Grind the pulp with a blender.
  • 2. Cut one onion into cubes, finely chop the garlic and lightly fry in a mixture of oils. I fry on the "FAST" mode for five minutes.
  • 3. Add rice, fried onions and garlic, chopped walnuts as small as possible, about half of chopped vegetable pulp, and cream cheese to the minced meat. Stir until smooth, add salt and pepper. Fill the vegetable "cups" with the prepared minced meat.
  • 3. For the sauce in a saucepan, boil the tomato juice along with the tomato paste. Add salt, sugar, ground black pepper, basil, cream and heat everything together for just a minute.
  • 4. Place the stuffed vegetables in the bowl. Cut the remaining onion into half rings, sweet pepper into strips and place them between the "cups". Also spread out the remaining vegetable pulp, herbs and pour over the prepared sauce.
  • 5. Switch on the "EXTINGUISHING" mode, by default. When serving, sprinkle with grated cheese and herbs if desired.
