Ingredients

wheat flour 1000g
water 400g
milk 190g
fresh yeast 13g
sugar 5g
butter 15g
salt 20g

Cooking method

  • Good morning everyone! If you like to eat fresh bread in the morning, then these buns are for you! The dough for buns must be prepared in advance, 12-13 hours in advance. And in the morning, bake lovely, soft buns!
  • Add all the ingredients and knead (I do it in HP) for 12 minutes.
  • Transfer to a container and leave to rise for 1 hour.
  • Then stretch the dough and fold it once.
  • Then put the dough back into the container, close and put in the refrigerator for 11-12 hours.
  • After this time, put the dough on the work surface and divide into 18 parts. Each piece is obtained with a weight of about 95g.
  • Shape the dough pieces into round buns, sprinkle with flour and let rise for 60-75 minutes. The dough should double in size.
  • During this time, preheat the oven to 240C.
  • Before baking, cut deeply with scissors. Or make the grooves crosswise.
  • Bake in the oven for about 20 minutes. The first 15 with steam.
  • That's all. Delicious!
