Ingredients

Wheat flour (I have sun) 600 g
Fresh pressed yeast 15 g
Salt 9 g
Water 230 g
Sugar 60 g
Softened butter (or margarine) 48 g
Milk whey 90 g

Cooking method

  • Heat water, whey, sugar, yeast to 37C, until sugar is completely dissolved.
  • Add flour, salt.
  • Mix for 4 minutes at low speed.
  • Add oil.
  • Knead until smooth for 10 minutes on speed 2. I kneaded in Thermomix.
  • Fold the dough in an envelope, put in a container (6L), oiled and leave for 90 minutes at a temperature of + 29-30C.
  • After a lapse of time, knead the dough, divide into 2 parts, round and leave under a towel for 10 minutes.
  • Next, distribute the dough with your hands into a rectangle and roll it up not tightly.
  • Put in a mold (1.7 l), oiled, cover with a bag and leave for 60 minutes at a temperature of + 29-30C.
  • Bake in an oven preheated to 200C for 20-30 minutes. The exact time depends on your oven.
  • Cool on a wire rack without a towel.
