Ingredients

Flour 200g
Sugar 200g
Sour cream 20% 200g
eggs 5 pieces
baking powder 1 teaspoon
lemon peel 2-3 teaspoons
plum 1 kg
butter

Cooking method

  • Pitted plums. If large, cut into 4-6 pieces.
  • Beat the cooled eggs at high speed, gradually add granulated sugar and beat until a fluffy white mass is obtained. Add sour cream, then lemon zest, and mix gently.
  • Add baking powder to flour and sift into a bowl with an egg-sugar mixture. Beat with a mixer until smooth.
  • Line a baking dish with baking paper and grease with butter. Pour the dough into a mold, put the plums on top, gently pressing.
  • Bake in an oven preheated to 180 degrees ~ 50 minutes.

Good evening. I baked a pie today, what can I say ... I find it difficult to say anything especially, since I did not understand what it should eventually turn out to be.
But I can point out something.
1. For those who will bake this cake for the first time, the plum should be sweet and ripe !!! My plum turned out to be soft, but sour. In the pie after tasting - it turns his eyes out, so sour!
2. Added plums, peeled and chopped about 700 gr. For so much dough, that's a lot! Next time I will reduce the amount of plums to 400 - 500 gr.
3. Used a round shape with a diameter of 21 cm. For this cake, the shape is clearly small! Yes, the pie turned out to be higher than that of the author, but it sat in the oven for 1 hour and 10 minutes and it feels like it’s damp (although the splinter popped out dry, I don’t understand what to orientate on in this case when baking). Next time I'll use a larger diameter mold. Let it be lower, but baked and sit less in the oven in time.
And now the most important question for the author ... Tell me please, what should be the cake? I mean the dough ... Should it be dry or wet? My dough in the pie turned out to be wet (apparently, the plum gave a lot of juice), although the splinter popped out dry (I already mentioned this). Or did you just need to increase the baking time? Really looking forward to your reply...
