Steamed dumplings with whey

Ingredients

Serum 250 ml
Vegetable oil 2 tbsp. l.
Egg 1 PC
Soda 0.5 tsp
Salt 0.5 tsp
Sugar 2 tbsp. l.
Dry yeast 1 tsp
Wheat flour 500 g

Cooking method

  • I knead the dough in a bread maker on the dough program (1.5 hours).
  • Pour warm whey into a bucket, add egg and rast. oil + soda. We saw that there was a reaction of whey with toda, we add flour, sugar, salt and dry yeast. If the yeast is saf-levure (I had them in the recipe), then you first need to soak them in warm whey.
  • The dough came up in an hour.
  • Steamed dumplings with whey
  • Then we put it on a table dusted with flour. This is how it will be alive.
  • Steamed dumplings with whey
  • Roll out with a thickness of about 5 mm. And squeeze out with a glass. You can, of course, with a glass, but then there will be a dumpling, you take it in your hands - it’s a thing)))
  • Steamed dumplings with whey
  • Put a little sugar in a circle, then a cherry. I only fit three things.
  • You can put any filling, because our dough is universal. We pinch the edges and put (standing) the strings into the double boiler. And cook for 5 minutes. If the dough is rolled out thicker than 5 mm, then 7 min.
  • I cook the old fashioned way. This is after 5 minutes.
  • Steamed dumplings with whey
  • We put it in a bowl, crumbling a little butter. Then shake off the dishes so that the dumplings are "bathed" in oil.

Note

With this dough, you can cook dumplings with any filling. The dumplings are very fluffy and tasty, although the dough is rolled out thinly.

Oh, how delicious the steamed dough with berries is!

How does this dough stand freezing? I mean, freeze them for future use of dumplings.

Oh, Tanyush is a cool recipe. Once my mother's girlfriend stuck dumplings, and pulled out pasties from the pan (by size)

Not, if you make it according to my recipe, then the dumplings do not increase much. Look at the photo where the dough is rolled out. They are small and neat lie stand on the table. And in a saucepan (double boiler) in width they became as much thicker ... by 1 - 1.5 cm.I had one dumpling 3.5 cm in width, but it became 5 cm.
How thin or thick you roll the dough and what diameter you have a circle of dough depends on the size of the dumpling.
Most likely, at my mother's friend chaki2005, they were initially rolled out not less than 1-1.5 and squeezed out with a glass.
Although I doubt that the way I did it.
Most likely, like everyone else, they rolled sausage thick dough sausage and cut into min. 1.5 cm. Or maybe all 2 cm. Here at the exit we got pasties.

Once, in my distant youth, I made a dough on soda ... Well, sho say, I didn't seem to sculpt them as babies, but how they were cooked. The ex-husband was laughing like an abnormal - one dumplings ate - and a mustache, free I told my grandmother, that laughed and said that there is still a dumpling dough with yeast - they laughed again, as they imagined, what at the exit with my love of maximalism will turn out

Yes, I make cutlets for home, and serving, and patches, and stuffed cabbage "with a friendly palm", such solid ones. The husband was surprised at first (quietly), but now he says to his mama "Sho, your cutlets are too small!
By the way, my mother said that when in childhood we went to visit relatives in Russia, they were treated to VERY large dumplings with cherries (of the last paws forces hope that this is a family!

So prepared dumplings in size, both types of dough are the same, both with soda and with yeast. It depends on what you initially stick on.

Zhivchik, so these are essentially steamed pies, no? In my opinion, dumplings are like dumplings. And what is the trick of combining yeast and soda with sour milk? I met such recipes for pies, but I never did that.

In my opinion, dumplings are like dumplings.

Dumplings are dumplings in water. They are in no way comparable with steamed dumplings.
Of course they are delicious, but, as for me, they are for every day. But for a couple, it's like festive.
Classic steamed dumplings are made deliciously on the side. And if it is also with yeast, then even tastier.

Sculpted with cherries. And with the photo it's hard for me. I inserted it 1 time, I already forgot how. And the son is out of reach. I cut it out not with a glass, but with a plastic mold with a diameter of a glass, put 4 cherries each.
But in general, they still taste to me - steamed yeast pies. Koreans have such - they are called pyogody. A Korean neighbor treated me. Which, in general, is not surprising - in many cuisines there are similar dishes under different names.

Great dough! But I didn't cook for a couple, everything is still ahead. I made the dough in the HP, it lay both in the refrigerator and in the freezer until I used up everything. She made pies and pasties and belyashi and just flavored and crunchy cakes. I understand that its purpose is steam cooking, but it turned out to be universal! And I will definitely make steamed dumplings!

Florichkaso how much of that dough? Few. And you have contrived and pies, and pasties, and whites, and flat cakes ... here's a craftswoman.
And the dough, yes, is universal. We are still waiting for reports on dumplings from you)

And yesterday I made dumplings with cabbage. Very tasty.

I made one bookmark according to the recipe, I was just alone at the dacha and tried everything 1-2 pieces. I was glad that the dough tolerates the freezer and 4 days in the withers. It is unusual to have both yeast and soda.

Why did I miss this recipe? My husband loves dumplings with potatoes. Here I will please him with your recipe!
lu_estrada
yeah, yeah, that's just what I need to freeze your awesome dough. My husband is not a fan of dumplings, dumplings and dumplins there. So I boil myself a few things for lunch. Now I will try to freeze the dumplings from your dough.

In our family, dumplings with cottage cheese were cooked very small - 4-5 cm in size, with potatoes - 6-7 cm, with cabbage, with apples - 7-8 cm, dumplings with cherry fruits, strawberries, apricots - 10 cm or more. Granny said - I want it to be ashamed, but it is fun to go there - Though it’s ashamed to go there, but it’s fun to go back - having such a huge dumpling.

And today I made steam dumplings-pies with cherries from this dough and tried the manti. Yesterday I cooked manti, but the filling remained, and so today I decided to try it from yeast, so that I could knead the dough again. She rolled out the dough thinly and turned out to be very delicate, delicate mantles.

Aina, I made that cabbage in July, then it was not sauerkraut yet. In a skillet (mult) I fried cabbage + frying (onion with carrots) and bell pepper + salt, black pepper, bay leaf. I didn’t add tomato.
Of course, if there is sauerkraut, then be sure to fry (not carcass, so that there is no liquid) in half raw / sauerkraut.

My mom didn't have enough time to pamper me, although she taught me how to make steamed dumplings. And then I already (from 10 years old) made such dumplings. Mom comes home from work, and a huge bowl of dumplings is on the table.
Usually steamed dumplings are made just with soda, and mine is even tastier.

I like them and they are cold. And if you heat it up in the microwave, then the dumplings literally "come to life" and to taste, nearlylike freshly prepared.
Why bother with them every day? Although this is optional, of course. Whoever loves. And I like to prepare the Mysk and that it was. And then such dumplings for some reason quickly disappear.

Came with a report and credit for the author !!!
Thank you very much from the whole family!
Very tasty, magnificently tender !!!
I only made steam for the first time, and therefore a couple of jambs nevertheless crawled out: the dough rolled out thinly and unevenly, but it did not affect the taste a bit, and in appearance they also turned out to be awesome mini-pies, only in the section the thickness of the walls was not quite the same, here:

Did you grease the dumplings with butter?

Did you grease the dumplings with butter?
Of course, I smeared it with melted cream. And it is very convenient - with a silicone brush I cooked in a cartoon, in a plastic basket. The first batch stuck to the basket, so I had to get out. She melted the butter, brushed the basket itself with a brush, laid out the dumplings, then, when the dumplings were already cooked, I took them out right with the basket from the multi and greased them with butter on top of the basket and turned the basket into a bowl and so on all the portions. They then get all greased on all sides, do not stick together and do not float in oil. Honestly, very convenient I just recently bought a silicone brush and work with it when necessary and inappropriate

I did not add boiling water (I immediately drank about a liter of it)
Almost all of the condensate was collected into the water collector, poured it out regularly, it dripped a little, so I almost keep a folded towel under the water collector all the time (I sometimes forget to empty the water collector, then it saves)
