Gorgonelli - homemade feathers pasta

Ingredients

Refined white wheat flour 600 grams (best white flour)
Fresh chicken eggs 3 pcs.
Egg yolks 3 pcs.
Salt ½ tsp.
Olive oil 1-2 tsp
The water is clean 3-4 tbsp. l.

Cooking method

  • I have dough left from cooking Pasta "agnelotti with ossobuco" and I decided to make a "Feathers" paste.
  • I will not describe the process of making pasta dough, you can see it in the topic at the link above, I don't want to repeat myself and the material is large.
  • NOTE: if the feathers are made fresh for cooking, then you can use the flour and its amount indicated in the recipe.
  • If you plan to cook the pasta for future use, dry it, then it is better to dilute the wheat flour with a certain amount of semolina-durum flour and take, for example, 500 grams of refined wheat ordinary flour and 100 grams of semolina, durum flour.
  • I take out a layer of parchment dough, lay it out on the board, straighten it. After storage in parchment, the dough did not lose its properties and quality, the same soft and plastic, moist.

  • Now I take the "treasured box" with accessories for pasta and choose an adjustable cutter for pasta, a relief board for pasta, and a stick.

  • I apply the cutter to the dough, adjust the width of the squares, it turns out 4 squares are about 3 cm wide each, and I cut with a cutter along the entire length of the dough. I get 4 strips of dough. Now I cut the dough across the strips with the same size, and I get squares about 3x3 cm in size from these squares and I will sculpt feathers.

  • I put the square diagonally on the embossed plate, put the stick and roll the tube, which is obtained with a corrugated pattern. The paste is easily removed from the stick.

I put the dough in parchment so that it does not dry out after rolling. The dough is on eggs and dries quickly, do not process the whole dough at once - but it is well stored in parchment, moisture remains in it.
I put the dough on a sheet, and fold it in a roll so that there are no folds on it, like this:
