Cream:
eggs 6 pcs.
butter 2 packs
powdered sugar 2 glasses
boiled condensed milk 200 g
vanilla
cream, fruit, chocolate figurines for decoration

Cooking method

  • Everyone knows the Harlequin cake, and I want to present to your attention the "Colombina" cake, invented by me, the assembly scheme, which is very similar, but the cream and cakes have a significant difference. No matter how it seems that a lot has been written and therefore the recipe is complicated - it is not. Both doughs are made at night and are very easy to mix and bake. Well, the assembly is not difficult. Its taste is very interesting and unusual, both due to the crumbly shortcrust pastry, and due to the unusual cream, very delicate, aromatic. Well, let's get started !!!
  • Shortbread dough:
  • 125 gr butter
  • 75 gr icing sugar
  • 1 egg
  • 1 boiled yolk
  • Beat everything until smooth
  • 200g flour
  • 75 g starch
  • 0.5 tsp baking powder
  • Knead the dough. It should not stick to your hands and be soft. The dough should sit in the refrigerator. Better to do it at night. Roll out 4 cakes with a diameter of 26 cm. Bake until golden brown at 200 C for 20 minutes. The cakes are very fragile.
  • False puff pastry:
  • 125 gr butter
  • 5 tablespoons flour
  • 1/4 cup water
  • 1 tablespoon vinegar
  • a pinch of salt
  • Chop the butter with flour to make a crumb. The oil must be from the freezer. Add vinegar and salt to the water. Collect the butter and flour crumbs with a slide, make a hole and pour in water. Knead the dough quickly. The dough should stay in the refrigerator better overnight. Make 4 cakes with a diameter of 26 cm. Bake until golden brown and most importantly until flaking is visible.
  • Cream:
  • 6 yolks
  • 6 proteins
  • 2 packs of butter
  • 2 cups powdered sugar
  • 200 g boiled condensed milk
  • vanilla
  • Grind the yolks with icing sugar until white. Stir in soft butter and add whites and condensed milk, whipped into a strong foam, alternately. Add vanilla. The cream should be smooth and uniform. Observe the same temperature regime for the products in the cream.
  • Assembly:
  • Put the sand cake, thickly cover with cream 2 puff cake and again cream. Do not regret the cream. Both cakes are dry baked goods, so the cream, or rather its quantity, plays a huge role. Well, and so we alternate to the end. We also carefully coat the sides with cream and refrigerate overnight. The final taste should have a pleasant crunch, but also melt in your mouth. Mine is decorated with cream and fruit, which also goes very well in taste. The finished cake smells like old Soviet ice cream, and despite the combination of dry cakes, it is very tasty! I didn’t add any nuts or fruits, but I can say for sure that nuts will add extra fat, but a layer of blueberries will refresh the taste and make it spicy. Thor 2.5 kg. Made for a company of 10 people. Everyone liked it. I would be glad if you like it too ...
