Bread with cottage cheese (bread maker)

Ingredients

Flour 450 g
Water 250 ml
Sugar 1 tbsp. l.
Salt 1.5 tsp.
Yeast 1.5 tsp.
Vegetable oil 1 tbsp. l.
Curd 5% 200 g

Cooking method

  • You can safely change half of flour for whole grain. (then + 20ml approximately)
  • Sometimes, instead of part of the water, I put sour cream, or part of the kifir (everything that is expired and lies in the refrigerator). Dissolve in water up to 250 ml

Note

My husband doesn't eat sweet bread, and neither does cottage cheese.
Since I myself love cottage cheese, it turned out like this:
Oooooo delicious bread, with curd sourness, rose high.
I added crumbly cottage cheese 5% (expired, the shelf life is 5 days, but mine was 10)

She put on bread in the evening. THANKS FOR THE RECIPE Instead of cottage cheese, I put curd mass with dried apricots 16.5% fat. I thought that the bread would be sweet as a bun, so I put it as if for tea, and it is as bland as regular bread. If you don't know what the cottage cheese was, you will never guess. ANOTHER APPLICATION OF CREATIVE. MASSES, : bravo: otherwise I mostly used the old curd mass for cheesecakes.
The bread turned out to be high and airy and less flour left. THANKS AGAIN!!!

Thank you very much for the recipe, just 5% salty Prostokvashino cottage cheese was lying around. peroxide - such a dirty trick, but now I bake to the recipe often and not only with sour cottage cheese. always on kefir, yogurt or whey. only no pictures yet)

I took out the bread from the HP, the roof fell heavily, apparently the flour had to be reported, but the taste pleased me, the bread was not dry, for me this is the most important thing. I really like it when the bread is a little rubbery, so I transfer this recipe to bookmarks and experiment with it, thanks to the author for the recipe.

Why experiment for a long time?
Here is "Wheat flour gingerbread man. Master class" https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=49808.0, read, learn - and everything will be OK

And it should be remembered that the curd in the dough always gives a lot of liquid and the dough will always be very soft. Try to reduce the amount of water you knead, and add as needed if the dough is tough.

Better if you add flour, then in the second batch

Let me remind you that flour during the second batch can be added only in the first half of the batch, so that the dough mixes well and the gluten has time to earn.
Otherwise, the dough will be non-mixed, and interspersed with raw flour in the dough

Girls, tell me, please, a beginner, and what weight is this bookmark designed for? What weight of bread in HP should I expose?

Flour here is 450 grams, so the weight of the bread needs to be set about 650-700 grams

We are looking at the topic The ratio of the weight of finished bread and the amount of flour bookmarked https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=115935.0

I did an audit in the refrigerator and found a pack of cottage cheese that was not the first freshness. How good it is with the oven and the food does not disappear
The bread went up well, only the roof slightly spoiled the picture on one side, although this did not affect the taste. My curd was damp, so I had to add a little flour to the normal bun.

An excellent bread, almost does not crumble at all, it is cut evenly, and even so delicious. I added Provencal herbs and replaced some of the flour with rye, here is the result:

It turns out wonderful bread. The crumb is just the most tender. This time, the cottage cheese added a little less (and there was not just the right amount). I slightly corrected the bun and as a result:

The recipe is great. I recommend it to the recipe box. Thanks to the author.
Baking in Kenwood 450 on program 1, dark crust, weight 750.
The mix is uniform. The recipe has a good balance of liquid / dry ingredients for the curd dough. The taste of cottage cheese does not dominate, but sets off. The crust is simply masterpiece. But the crumb is "damp" for an amateur. The husband - a lover of classic bread did not appreciate, the daughter said "this is the best white bread that she ate

I baked bread last night! I put more (250g) cottage cheese, added 1 tbsp. l. flour, sugar replaced with honey, put one tbsp into the dispenser. l. pine nuts and raisins. It turned out amazing bread, exactly the size of my panasik's bucket. Soft bread, when removed from the bucket, dropped it strongly on the top and the roof was rumpled

I baked it again this morning, I really liked the bread, went further with the changes, replaced 100 g of flour with 2-grade flour, and put 2 tablespoons of honey. l., liquid whey + sour milk 250ml, again pine nuts and raisins, but a little more. I wanted to get a sweet roll.
The bun turned out to be slightly smaller than the first version and the crust turned out to be dark, although the lightest was exposed

here is the cut
Bread with cottage cheese (bread maker)

The bread itself turned out to be darker, since 2 grade flour was used, and the milk and honey made the dough heavier, so the bread "squatted" a little at the bottom and at the edges. But I'm happy with the result. Very tasty, stupefying smells of honey and tastes almost kulich
Thanks for the recipe, very creative, you can change something every time depending on the food in the refrigerator.

I'm finally bringing a photo of my Curd Bread.
Delicious unsweetened, not too rich, but soft, springy, 4th day non-hardening Bread.
Bread from Sonadory, with the use of cottage cheese, which I love very much and often bake for me is more like a loaf ~ it is, in fact, a Bun (egg, sugar, butter), and this is exactly Bread.
The photo shows a bun - it was soft, smeared with. the bottom. And the "chubby" bread with a curly roof ~ apparently the result of replacing water with whey. My gag ~ as always ~ Pre-mix on Dumplings also played a role! Live yeast Lux roamed freely!
Judge for yourself...

I bake this bread with different variations, I really like it. This time:
205gr cottage cheese with lingonberry jam
260gr of water
200gr c. h. flour psh.
270g in. from. flour psh. White Tender
1h l. salt
0.7h l. yeast Saf-moment
without oil
Since there was not enough yeast, I did not add it from another pack, but put it on a low-yeast mode. The bread rose well, on a full bucket.
