Russian rolls from flour grade 1 in the oven

Ingredients

Wheat flour 1 grade 500 g
Fresh yeast 10 g
Salt 7 g
Sugar 25 g
Water 350 g

Cooking method

  • Crumble the yeast into flour and rub with your fingers.
  • Add all other ingredients, stir until smooth, cover and leave for 20 minutes.
  • Next, knead until smooth. I have 7 minutes in Thermomix, Spikelet mode.
  • The dough is smooth, elastic:

  • Put the dough on the table, form a ball, place in a container slightly oiled, cover and leave for 40 minutes. Then fold the dough four times, return to the container and leave for another 40 minutes. After some time, repeat the folding procedure and leave the dough for another 70-100 minutes. The total fermentation time of the dough, thus, will be 2.5-3 hours.
  • Then divide the dough into 8 equal parts. Form a ball from each, cover and leave for 10 minutes.
  • Form a bun from each ball. To do this, lay the ball with the smooth side down, flatten it with your hands, tuck the edges to the center, pull together, pinching, everything into a bunch and put it knot down on a baking sheet for proofing for 40-60 minutes:

  • Heat the oven to 250C.
  • Before baking, make cuts on the rolls, sprinkle with water.
  • Bake at 250C for 5 minutes, then lower the temperature to 220C and bake until tender. The total time depends on your oven. I had 30 minutes.
