Brussels waffles

Ingredients

wheat flour 500 g
butter 100 g
milk 350 g
mineral sparkling water 500 g
egg 2 pcs
sugar 1 tbsp
dry yeast (I have Saf-Moment) 6 g
salt pinch

Cooking method

  • Girls, these waffles are delicious. I would call them "you can't drag waffles by the ears."
  • Melt butter, mix with warm milk and soda water. Add beaten egg, sugar, salt. Whisking, gradually add flour with yeast, bring the mass until smooth. The dough is quite liquid. Leave to rise for 30 minutes. Bake on a preheated waffle iron until lightly blush. Sprinkle the finished waffles with icing sugar. Serve warm, with whipped cream and strawberries. I poured whipped sour cream (with cream it will be even tastier), raspberry syrup and strawberries. If the waffles have cooled down while you were baking them, do not be too lazy to heat up literally 5 seconds in the microwave. Eat and enjoy! They are so airy, they just melt in your mouth.

I came across your recipe, and then the recipe author's page 🔗, which assures that this is how they should be. Rather, it was interesting that the recipe was more or less dietary, because in most recipes all waffles are expected to crunch and friability, which cannot be achieved without a large amount of butter. But, as I understood, Brussels waffles are still soft waffles, and they crunch only in the heat of the heat, and then they become like our pancakes. The first time I did not attach any importance to this moment, so from the entire specified volume of dough I immediately baked all 28 pieces, which, after lying down, became limp, became less interesting, and I had to come up with ways to dispose of them, such as making mini-pizza wafers out of them. Fortunately, the recipe contains a small amount of sugar and vanillin is not indicated. But for the second time we used them immediately, "in Brussels style", as in your photo. I, however, put more sugar on a spoonful and added vanillin. And in such a freshly baked form, they made a delicious impression. I write the recipe in my notebook!

Thanks for the recipe! I added another 1.5 tbsp. l. sugar and vanillin. It turned out great, the waffles are crispy on the outside and soft on the inside. Very lightweight. I really want to try adding a little more muffin to the recipe.
As I prepared the waffles, I sprinkled them with sah. powder, put it on the wire rack and sent it to the oven, preheated to 125 C, so that they would not cool down, and I have the impression that they were still cooking in the middle there (under the wire rack I had a baking sheet covered with baking paper so that the powder would not spill on the bottom of the oven.). Also advice - you can not bake the dough all at once, but half. The rest can be safely left in the refrigerator, covered with kitchen wrap (stick it to the dough, leave a margin around the edges, otherwise a crust will form).
The next day, the dough did not sour, and I only "kneaded" it a couple of times in the refrigerator, simply pressing it down a little with my palm and mixed it just before baking the next morning. The waffles on the 2nd day were even tastier.
I served them with berry sauce: 400 gr. ice cream. assorted berries + 100 gr. heat sugar gradually increasing the fire from och. small to medium - until the sugar dissolves and the berries are warmed up (slightly boiling). 1 tbsp. l. dilute corn starch in 2-3 tbsp. l. cold water and add to the sauce. Warm the sauce for a couple of minutes until the starch flavor disappears. You can adjust its density by adding water or starch, respectively. As it cools, the sauce thickens on its own. The amount is large, so you can make half the recipe for the number of waffles that come out.
