Fabulous cake (Cheesecake without baking)

Ingredients

Jubilee cookies 225 g
Butter 120 g
Cream 35% 300ml
Any cream cheese (mascarpone, almette, philadelphia) 300 g
Powdered sugar 4-5 tablespoons with a slide
Sheet gelatin 6 plates (11 gr)
Caramel topping
Fruits

Cooking method

  • Grind cookies in a blender and add melted butter. Stir and put in a split form (I had 22 cm). Refrigerate for 30-40 minutes.
  • Whip the cream with the icing sugar. Add cheese and beat again. Taste the sweetness, maybe it may seem a little sugar to someone, then you can still add.
  • Wash, cut and dry the strawberries. Soak gelatin for 5 minutes, squeeze out and melt in a water bath until liquid. Add to the whipped mass. Put the strawberries there, mix everything and pour into the mold (I laid the mold on the sides with baking paper). Put in the refrigerator for 2-3 hours.
  • Then take out the cake, remove the mold and paper. Decorate as you wish. I made a mesh of caramel topping and decorated with fruits.
  • Bon Appetit!!!!

Why Olesya! Gelatin can, of course, be replaced with regular, but for some reason I like leafy more. It is sold now in almost all supermarkets. And add the usual as written in the instructions on the bag. And I buy caramel topping at a pastry shop

Can I tell you how to make caramel topping, you need to make dark caramel from 250g of sugar and add 175g of heavy cream there and stir with a whisk. Just be careful, the caramel starts to boil, I usually add a little cream and periodically move it off the stove.

Thanks for the recipe. Made a cheesecake yesterday, just added raspberries instead of strawberries and covered with chocolate icing. Usually I make a creamy layer in the same way, but instead of cheese I use homemade weighed yogurt to reduce the cost. My husband liked it better with cheese, with yoghurt it turns out more airy.
