Bread with semolina on dough

Ingredients

Opara
bread flour 100gr.
semolines 100gr.
Sahara 10gr.
dry yeast 2gr.
water 140gr.
Dough
flour 150gr.
semolines 150gr.
water 170gr.
olive oil 25g.
salt 9gr.
sesame seeds for sprinkling

Cooking method

  • Knead the dough, tighten with a film and leave for 1.5-2 hours, at a temperature of 25-30g. (I had more, because the temperature was lower). Dough is ready when it is in a state "on the verge of falling off"
  • Mix all ingredients with a spatula until smooth. And then with a combine, knead with a hook until smooth for 5 minutes.
  • Fermentation (maturation) for 1.5 hours. After 45min. Pull the dough out and fold.
  • Then put the dough on a dusty surface and round it. Leave to rest for 20 minutes.
  • Form a loaf (round or oval) with the seam facing up. Let it stand for 50 minutes.
  • Turn over onto parchment, shaking off excess flour. Moisten a little with water and sprinkle with sesame seeds (I have brown) Make cuts.
  • Bake (first 10 min. With steam) at temp. 240gr. within 35 minutes.Bread with semolina on dough
