Pork ribs "Intoxicating"

Hop pork ribs

Ingredients

rack of pork ribs 1.5KG
potatoes 0.5KG
onion (large) 1 PC
carrots (medium) 1 PC
sherry (Oloroso) 150-200 ml
water 100 ml
salt taste
mixture of four peppers (ground) 1 tsp
cardamom (ground) 2-3 pcs
coriander (ground) 0.5 h l
cinnamon, nutmeg, cloves on the tip of a knife
dark mountain honey 1 tsp
balsamic vinegar 1 tsp
olive oil and butter for frying

Cooking method

  • 1. Cut onion into half rings, carrot into slices and place on the bottom of a baking dish.
  • 2. Cut ribs into portions and fry in a pan until golden brown in a mixture of olive oil and butter. Place in a mold over the onions and carrots. Peel the potatoes and lay them on top (it is better to choose not too large, about the same size and lay them whole).
  • 3. Mix the sherry, balsamic vinegar and honey. Add all the spices and salt. Pour the resulting mixture into a mold and add water. Cover and put in an oven preheated to 180C for about an hour and a half. Serve immediately.
