Chicken salad with prunes or dried apricots

Ingredients

Chicken breast 1 PC.
Onion 1 PC.
Eggs 2 pcs.
Prunes 300 g
Cheese 250 g
Mayonnaise 400 g

Cooking method

  • Boil chicken breast, cut.
  • Dice the onion, add sugar, salt and a little vinegar. Stir and leave for 30-60 minutes.
  • Boil the eggs.
  • Pour the prunes with boiling water, leave in for 30 minutes. Then drain the water, dry and cut into small pieces.
  • Cover the plate with a thin layer of mayonnaise, like all layers of salad. I don’t like to spread mayonnaise with a spoon, so I buy mayonnaise in soft bags, cut off a thin corner and squeeze the mayonnaise out, like from a pastry bag, in a thin stream.
  • Put the chicken on the bottom.
  • The next layer is an onion, which must be squeezed out a little.
  • Eggs, grated or diced prunes.
  • Rub the top of the salad with cheese.
  • There are two plates of this salad. If you wish, you can safely replace prunes with dried apricots, which should also be steamed and cut into pieces.

Oksana, sorry, I will answer for you! Vinegar is taken 9%, 3/4 cup. water - 1 tbsp. l. vinegar and sugar to taste. Try some pickle; it should be sweet and sour. I do this, maybe Oksana does it differently.

Prunes deprive banality of a solid, already familiar combination (chicken + egg + cheese).
1. I tried to make it with both prunes and dried apricots. Prunes sound more interesting.
2. The first portion of the salad was seasoned with purchased mayonnaise. The second is homemade, with a citrus note. So it seemed to me that this note reveals the taste of the salad, makes it brighter. From now on I will add a pinch of fine lemon or orange zest to mayonnaise, just a little.
