Ingredients

For 1 serving:
Yolks 3 pcs.
Sugar 1-1⅓ st. l.
Marsala white 60 ml.
below is an option to replace Marsala:
White port 30 ml.
Cream liqueur (based on cream) 30 ml.
Berries or chocolate for serving

Cooking method

  • Italian desserts are renowned for their ease of preparation. Take tiramisu, for example, it's simple, quick and sooo delicious.
  • I would like to share with you another wonderful Italian dessert - zabaion. Preparing is elementary, and the effect is amazing - you just want to lick the bowl clean!
  • I'll start with the ingredients. Marsala ... A mysterious word ... In fact, it turned out to be a strong Sicilian dessert wine, like made (y) ry, only sweeter. Marsala is a rare guest in our area. I tried to replace it with Madeira (I had only dry one) and unnecessary sourness appeared. Using the selection method, I settled on the following option: 50/50 dry white port (the same Madeira) and cream / cream liqueur (like Baileys) - together in the dessert they give the flavor combination as close as possible to the original. I dabbled in other cream-based liqueurs as well - they bring an additional aroma or flavor, in short, they are suitable. Of the others, I liked the creamy Limoncello, gave the dessert a light citrus accent.
  • Well, okay, enough lyrics, let's get started.
  • For cooking, you will need a whisk and a steam bath (a saucepan with a little water + a bowl set on top that does not touch the water, the water should not boil - on the verge).
  • Zabaion Zabaion
  • Mix all the ingredients in a bowl without bothering. There are two options in the photo - with Marsala and with a replacement (liquor + port).
  • Zabaion Zabaion Zabaion
  • We put the mixture in a bath and stir constantly, without beating. Our goal is not to get foam, but a cream with a consistency reminiscent of thick mayonnaise.
  • The mixture will bubble at first. Then, as it warms up, it will foam more and more. And in the end it will begin to settle, thickening. And you will feel resistance, and the mixture will already quite hold its shape. The whole process will take 7 to 10 minutes (depending on the number of servings you are boiling). Here, look at the photo, what stages of consistency the cream goes through.

  • After removing from heat, the cream must be cooled. Put it in cold water (preferably with ice) and stir occasionally. It will thicken even more, stop spreading.

  • The cream is ready! You can serve!
  • If these are fresh berries, you need to wash and dry them, cut large ones. Frozen berries do not need to be defrosted; after standing in the dessert, they will give their cold to the cream.

  • At the bottom of the bowl (glass, glass or bowl) put more than half of the berries, spread the cream and sprinkle with the remaining berries.
  • Can be served with chopped chocolate.
  • I prefer well chilled with fresh strawberries.

If, instead of constantly stirring, manually turn on the mixer or simply beat it intensively by hand, the dessert will turn out to be foamy. Like this:

With fructose, the cream will also work, but it will not be as strong, yet fructose stabilizes the yolks (and proteins) worse than sugar.

The steam room is still more gentle. You can try, only you need to interfere without stopping. Sugar, of course, protects the yolks from folding, but there is not much of it.
I'll try it myself tonight. Maybe the process will go faster.
