Note

I learned that semolina is harmful to young children! And I always added semolina or white bread to the cutlets. I had to change this ingredient and LOVED the result!

Bon Appetit!

I learned that semolina is harmful to young children!
I have already heard such a story before. Why didn't you say it harmful? In my opinion, it was said that it is not worth feeding with one pollen, it is necessary to feed it in different ways, there are plenty of cereals.

And I also read in some children's magazine that until 6 years old, it is simply forbidden to give semolina porridge. I was also so surprised ... more than one generation grew up on this porridge, and it seems everyone is alive ...

Here I read a lot.

I know that there are practically no useful microelements in semolina, as well. since this porridge is often given to children, then they, therefore, do not receive them, and they still do not have a supply of these substances, so the lack is manifested by rickets and other joys ... but this, IMHO, you still need to try to feed the child like that This porridge saturates well, so they stuffed us with it, the children swell in front of our eyes, and the benefits ... but taste like (this is for me)

Disadvantage # 1: semolina "eats" calcium
The fact is that semolina contains phytin, and phytin contains phosphorus, which binds calcium salts and prevents them from entering the blood. The level of calcium salts in the blood of a person should be constant - about 10 mg per 100 ml of blood serum. As soon as there are fewer salts, the parathyroid glands “remove” them from the bones and send them into the blood. Only, children have not so much calcium in their bones, besides, children grow up quickly, they really need it. It turns out that semolina deprives them of calcium. If there is little calcium in the body, muscles and heart work poorly, blood clotting worse. A striking example of a lack of calcium is the increased excitability of nerve cells and the appearance of seizures. Therefore, children who are heavily fed with semolina porridge (2 - 3 servings a day) often develop rickets and spasmophilia. Parents may have questions. Do other cereals also bind calcium? Yes, but to a lesser extent than semolina. That is why doctors now recommend, when pocketing babies, first with vegetable puree, and then with meat. Will vitamin D save in this case? After all, it promotes the deposition of calcium in the bones. To this I answer this way: those doses of vitamin D that are needed with proper nutrition are not sufficient for a child growing like yeast (and this is how it grows on semolina). The more weight, the more you need both calcium and vitamin D. And why doesn't semolina harm adults? Why do we eat bread several times a day and do not lose calcium? We, adults, do not eat so much kasa relative to our weight, and our need for calcium is much lower than that of children. But if you eat only semolina, the lack of calcium will affect the adult as well: osteoporosis will occur - increased fragility of bones. As for bread, phytin loses its ability to bind calcium in it under the influence of acid, which is formed in yeast dough. Many scientists believe that those peoples who did not master the production of sour bread and ate unleavened wheat or barley cakes could not create powerful, developed civilizations. On the contrary, “rice” civilizations (there is little phytin in white rice) turned out to be viable.

Disadvantage # 2: Not everyone is gluten tolerant.
Semolina contains a lot of gluten. This protein is also called gluten. It is gluten that gives elasticity to the dough and soft fluffiness of bread. But many people are intolerant to gluten, and it causes celiac disease, a severe hereditary disease that affects about one in 800 Europeans. Gluten and similar proteins are found in five grains: wheat, rye, oats, millet (millet) and barley. Under the influence of gluten in celiac patients, the intestinal mucosa becomes thinner and the absorption of all nutrients, especially fats, is impaired. The disease manifests itself when a small child is given semolina (less often oatmeal). The stool becomes profuse, mushy or liquid, light, with a shiny (fatty) surface. The child stops gaining weight, his belly grows, and the muscles, on the contrary, decrease. If the disease manifests itself at an older age, the child complains of abdominal pain, intestinal dysfunction, but the disease does not manifest itself as violently as in infancy. I must say that gluten can cause another disease - allergies. It also presents with stool disorder. The diagnosis of celiac disease is not difficult - a biopsy of the intestinal mucosa must be done. And then - diet: all foods with gluten are excluded for life. We'll have to give up bread and flour products, cereals (except for buckwheat and rice) and all products that include flour - boiled sausages and sausages, sauces, canned fish in tomato. ... ... Indeed, even 200-500 mg of gluten per day is enough to disrupt intestinal absorption. Parents are usually shocked by such a sentence. But in vain. If a child has never eaten bread, buns and semolina until two years old, he will not be drawn to them.

Why even add flour (or semolina) to the minced meat?
lenok2_zp
I always throw semolina into cutlets, they are so tender then. My senior grew up on semolina, and nothing - 2 meters tall
darmoed
With semolina everything is clear, and the rumors about its "badness" are greatly exaggerated, but flour ... An extra, giving nothing ingredient, in my opinion.
