Chocolate muffin with blueberries

Ingredients

Dough:
butter 180 g
eggs 210 g
granulated sugar 180 g
wheat flour 280 g
cocoa powder 40 g
bitter chocolate (70-75%) 65 g
milk 120g
vanilla sugar 10 g
baking powder 10 g
blueberry 250g
starch (only for frozen blueberries) 1 tbsp. l
Glaze:
protein 1 PC
powdered sugar 80-100 g
lemon juice 3 tsp

Cooking method

  • Defrost blueberries and let the water drain properly, add a spoonful of starch. Just sort out fresh blueberries, wash and dry.
  • Bring the milk to a boil, add the chocolate pieces and stir until smooth. Cool down.
  • Beat the softened butter with sugar and vanilla sugar into a fluffy white mass, add eggs one by one (at room temperature), beating after each for at least a minute. Add the chocolate mass and beat again.
  • Mix flour with cocoa powder and baking powder. Sift the flour mixture and add to the dough in two or three passes, kneading with a spoon or mixer at the lowest speed.
  • Add the berries to the dough and stir gently.
  • Grease a baking dish with a little butter and lay out the dough.
  • Bake in an oven preheated to 180C (convection 160C) for 50-60 minutes. The toothpick comes out of the finished cake dry.
  • Put the cake on a wire rack, cool and decorate with icing.
