Chicken liver pate with olives and cognac

Ingredients

chicken liver 500 g
butter 100 g
garlic 2-3 cloves
onion 1 PC
olives (pitted) 20 pcs
cognac*** 30 g
salt, freshly ground black pepper taste
+ butter for pouring the top 70 g

Cooking method

  • Finely chop the onion and garlic.
  • Clean the liver from hanging films.
  • Melt butter (100 g) in a skillet over medium heat, add onion and garlic. Fry, stirring occasionally, for about five minutes until soft.
  • Add liver. Fry, stirring occasionally, until tender, about 10 minutes.
  • Remove from heat, let cool slightly, add olives and cognac (***see note), freshly ground black pepper and salt (I added 1.5 tsp), purée with an immersion blender until smooth.
  • Melt the butter (70 g).
  • Put the pate in a mold, smooth and pour over melted butter.
  • Refrigerate for 2-3 hours.
  • Serve with fresh bread. Bon Appetit.

*** A few words about the amount of cognac in the recipe. I don’t drink alcohol and I don’t like it, in general, in any form (I don’t drink anything stronger than kefir), therefore, for my taste, 30 g is a lot, I reduced it to 10 g. But my husband, on the contrary, liked the pate exactly with 30 g of cognac, so that when making pate, be guided by your taste.
