Roll with curd cream and strawberries

Ingredients

For the test:
eggs 3 pcs
flour 90 g
sugar 90 g
For the cream:
butter 70 g
cottage cheese (pasty) 200 g
powdered sugar 50 g
White chocolate 50 g
lemon peel 1-1.5 h l
cognac 1-2 h l
For filling:
fresh strawberries 8-10 pcs
For impregnation:
strawberry syrup 50-70 ml
cognac 1 tbsp

Cooking method

  • 1. Beat eggs with sugar until creamy (beat for at least 10-12 minutes). Add flour gradually and stir gently until smooth. Pour the dough onto a baking sheet covered with parchment and bake in an oven preheated to 200 degrees for 12-15 minutes. Cool the finished biscuit completely.
  • 2. Beat the softened butter with powdered sugar, add white chocolate, melted and cooled to room temperature. Gradually add cottage cheese, beat everything into a fluffy mass. Pour in the zest, pour in the cognac and whisk everything together again. Put in the refrigerator for 30-40 minutes.
  • 3. Saturate the cooled biscuit with cognac syrup, then brush with cream, leaving a little to cover on top. On top of this layer along the narrow side, lay out halves of strawberries (it is advisable to first dip them in jelly for cakes), then roll the layer into a roll. Grease the finished roll with the remaining cream and decorate as desired.
  • And the strawberry syrup for this roll can be done like this: boil 70-80 ml of water with one tablespoon of sugar and boil over medium heat for several minutes. Then pour in strawberry juice squeezed from several berries (just through a fine sieve or in any other convenient way), add a few drops of lemon juice and warm everything together for a couple of minutes. When it cools down, pour in the cognac.

For the cream I take 3-5% pasty cottage cheese in packs, most often "Slavyanochka" and the cream turns out to be light, not greasy. But sometimes it comes across with grains and then I first go through it with an immersion blender, and only then add it to the cream. I also used Philadelphia, a lightweight version. It turns out delicious, but at a pricey price.
