Curd pancakes

Ingredients

cottage cheese (ricotta, quark, homemade cottage cheese) 1 cup
flour 2 cups
sugar 1/4 cup
kefir or buttermilk (butter) 1 1/2 cups
soda 1/2 tsp
salt 1/2 tsp
baking powder 2 tsp
eggs 2 pcs.
melted butter 2 tbsp. l.
lemon zest 1 tbsp. l.

Cooking method

  • Separately, mix well and beat eggs, kefir, cottage cheese, butter and lemon zest.
  • Combine dry ingredients in a bowl.
  • Gently mix with flour mixture until a single mass
  • Bake in vegetable oil.
  • Serve with jam, berries, fruits, sour cream.
  • Bon Appetit!
  • P.S. I made with kefir. I took grained cottage cheese (with cream).

Girls, but my simplified variation on this theme is very popular.

We throw cottage cheese (a pack), a couple of eggs, sugar-salt into the blender bowl, and add literally 2-3 tablespoons of flour, you can add slaked soda. We turn on the blender for a minute, it turns out a thin dough, like sour cream. You can throw raisins there.
Bake in vegetable oil, scoop up like pancakes. It turns out this version of cheese cakes, but without getting dirty hands and very quickly.

Made on whey, I still have it in large quantities from home production of low-fat cottage cheese in the cold way. I didn't add soda, only baking powder. Instead of sugar - fructose, instead of butter - almond. There was no lemon - I added a packet of vanillin, plus dried cranberries.
Mine were praised, and that there is cottage cheese in pancakes - they did not guess (also not amateurs)

And we just did it, though I baked in the PHILIPS HD 2420 Cucina.Delicious! The curd is not felt at all.
I took: about 250 grams of homemade cottage cheese, 300 grams of flour, about 200 grams of yogurt, 2 eggs, vanillin instead of lemon, everything else - almost the same, though it was obvious.
I liked baking in a sandwich maker because there was no need to pour fat into the pan. Truth and taste changes from this, but I liked it even more, and it was even healthier.

I took homemade cottage cheese, 250 gr. for 1.5 cups of kefir 2.5% fat. The rest is prescription. The pancakes turned out to be tender and fragrant! I will definitely cook it again!
