Bread Ambassador

Ingredients

Dough:
flour 250 g
water 200 ml
fresh yeast 2 g
Dough:
flour 150 g
milk 60 ml
fresh yeast 5 g
salt 1 tsp
Extraction:
flour 100 g
eggs 1 PC
sugar 2 h l
ghee butter 25 g

Cooking method

  • 1. For dough, dissolve yeast in warm water, combine with flour and knead at low speed for 2 minutes. Leave for fermentation at Т28-30С for three hours.
  • 2. For dough mix flour with salt, dissolve yeast in warm milk. Pour the milk-yeast mixture into the finished dough and mix until smooth. Add flour and knead on medium speed for 3-4 minutes. Leave for fermentation at T28-30C for an hour (up to 2.5-3 times increase).
  • 3. For the final kneading, grind the egg with sugar, pour the resulting mixture into the dough and knead until smooth. Then add the remaining flour and continue kneading at medium speed. Knead the dough for 5-6 minutes, pour in the melted butter and knead for another 2-3 minutes. The dough is very soft and silky, but sticky. Leave to rise for 45 minutes (up to three times increase).
  • 4. Put the finished dough on a cutting mat lightly dusted with flour and shape into a tight ball. Leave for proofing for 35-45 minutes. Bake in an oven preheated to 220C for the first seven minutes. Then lower the temperature to 180C and bring the bread to readiness.
  • Before baking, make cuts with cooking scissors and brush with milk. If desired, after baking immediately, you can grease the finished bread with cornstarch jelly.
