Banana cake with chocolate

Ingredients

Dough:
Ripe banana pulp 1 glass (4 pcs.)
Sour cream 1/4 cup
Vanilla sugar 1 tsp
Flour 2 glasses
Eggs 2 pcs.
Baking powder 1 tsp
Salt pinch
Sugar 1 glass
Butter 1/2 cup
Chocolate drops (or grated chocolate) 1/2 cup
Cream:
Sugar 1/2 cup
Flour 1/4 cup
Cocoa 3 tbsp. l.
Butter 1 glass
Chocolate 100 g
Milk 1 glass

Cooking method

  • The recipe was taken from a magazine. I can't say for sure from which one, since only a page with this recipe remains.
  • 1. Preheat the oven first.
  • 2. Cover with parchment and grease 3 round tins with a diameter of 20 cm. I used 3 different tins within 20 cm - all of them just fit on one oven shelf and baked at the same time. After baking, I cut the cakes to the same size.
  • Dough:
  • 3. In a bowl, combine the banana puree, sour cream and vanilla sugar. Mix flour, baking powder, and salt separately.
  • 4. In a small bowl, whisk the margarine / butter and sugar with a mixer on medium speed until smooth, creamy. While beating, add eggs one at a time. At low speed, alternately add flour mixture and banana mixture (start and finish with flour). Add chocolate and stir.
  • 5. Spoon the dough into tins and bake for 25-30 minutes. The temperature was not indicated in the recipe, I baked at 160 degrees.
  • Cream:
  • 6. Make a custard cream. In a bowl, combine sugar, flour, and cocoa. Add just a little milk.
  • 7. In a saucepan, bring the rest of the milk to a boil. Pour some of the hot milk into the flour-sugar mixture, mix well and pour back into the saucepan. Return to the stove, bring to a boil and simmer, stirring constantly, for 2 minutes. Remove from heat, add chocolate to hot cream, let it melt slightly and stir until smooth. Refrigerate.
  • 8. In a bowl with a mixer, beat the butter until creamy. Add the chocolate cream and stir again.
  • Assembly:
  • 9. Put the first crust on a dish, brush it with about ½ cup of cream. Cover with a second crust, put ½ cup of cream on top, then the last crust. Grease the top and sides of the cake with the remaining icing. Since the cream turned out to be a little liquid (either the butter was not very good, or the cream was mixed with butter when it was still warm ... try to figure it out now) I collected the cake in a mold, he insisted in the refrigerator overnight and only smeared it in the morning the rest of the cream.

Delicious, aromatic banana-flavored biscuit, I got it quite dense.
I used black chocolate for the cream, but it would be interesting to try with milk.
The weight of the finished cake is about 1 kg 200 g.

I would not recommend an oven in one form. Firstly, I do not know how he will behave: whether it will rise, whether it will be baked and how long it will take. And secondly - will it be possible to cut it beautifully because of the chocolate drops inside? Maybe it's better to bake one large and low crust on a baking sheet, and then cut into the necessary strips / squares?

It's just, I did an experiment once. Baking a sponge cake on kefir not with separate cakes, as stated in the recipe, but with one cake in a silicone mold. As a result, the biscuit turned out to be dense, clogged and dark in color (I still did not want to bake it - so I kept it in the oven until victorious). And when I baked with separate cakes, the biscuit turned out to be soft, fluffy and light. So now I am wary of the one-layer baking option unless the recipe calls for it.

How will you bake in the oven? Do you have a baking sheet for it? I would cover this very baking sheet (large and square, with low sides) with parchment, pour all the dough into it and bake it with one cake. After the cake has cooled, I would cut it into 3 equal rectangular pieces and assemble the cake.
