Darnitsky sourdough bread (Redmond M90)

Ingredients

Rye sourdough 60 g
Peeled rye flour 410 g
Wheat flour 1c 280 g
Water 450 ml
Salt 12 g

Cooking method

  • Dough:
  • Rye sourdough - 60 gr
  • Peeled rye flour - 230 gr
  • Water - 150 ml
  • Mix all the ingredients, close the dish with a lid. The dough matures at room temperature for 12-14 hours. To speed up the process, you can put the dough in a water bath with the Multipovar program at + 35C for 5-6 hours. Ripe dough almost doubles in volume.

  • Wheat flour 1c - 280 gr
  • Water - 300 ml
  • Salt - 12 gr
  • The kneading is short, 3-4 minutes, the dough is very sticky, there is no kolobok during kneading. Grease the bowl with oil, with wet hands form a bun out of the dough, put into the bowl. Further:
  • For M90 without auto-heating off:
  • Proofing at + 35C on a multi-cooker for 2 hours. The dough should at least double in size. Bread mode 1 hour, overturn, 30 minutes bake on Baking.
  • For M90 with auto-heating off:
  • Proofing at + 35C on a multi-cooker for 1 hour. Bread mode 2 hours (the first hour is proofing, the dough should eventually at least double in size), overturn, bake for 30 minutes on Baking.
  • The bread is very fragrant with a crispy crust. Not at all worse than from the oven in which I baked it for many years.
