Pani Kabluchkova cake

Ingredients

Dough:
Margarine 250 g
Egg yolks 5 pieces.
Sugar 200 g
Sour cream 4 tbsp. l.
Flour 3 glasses
Baking powder 1 tbsp. l.
Fillings:
Sour jam
Poppy 1 glass (120 - 130 gr.)
Egg 1 PC.
Sugar 0.5 cups
Starch 1 tbsp. l.
Butter, soft 1 tbsp. l.
Chopped walnuts 1 glass
Raisins 1 glass
Protein cream:
Protein 5 pieces.
Sugar 1 glass
Kissel dry 90 g (1 bag)
Cream:
Softened butter 200 g
Condensed milk boiled 380 g (1 can)
Cognac 2 tbsp. l.
1 glass - 230 ml.

Cooking method

  • Dough: Grind the margarine with sugar, gradually add the yolks, constantly stirring and rubbing, then sour cream and flour mixed with baking powder. The dough is slightly sticky. We collect it in a lump and send it to the refrigerator for an hour.
  • Pani Kabluchkova cake
  • Then I laid everything in one layer in a rectangular shape 40x25 cm, covered with baking paper. The thickness of the rolled dough turned out to be about 7 - 9 mm.
  • Spread the dough with thin sour jam, thin. I have plum jam.
  • Protein cream:
  • Beat the whites, gradually adding sugar. Then gently add dry jelly. If you bake 2 cakes, make the protein mass in two passes. Spread the protein cream on top of the jam.

  • Preparing poppies, raisins and nuts:
  • Boil the poppy with boiling water, grind with a blender, add an egg, sugar, starch, oil. Mix well.
  • Rinse the raisins and steam. Dry on a napkin.
  • Dry the walnuts, peel and chop slightly.
  • We spread poppy seeds, raisins and nuts on a protein-jelly mass. If you make two cakes, lay out the second in a mirror image.

  • Bake for 45 minutes at 170⁰ С. Cool.

  • Beat the softened butter until fluffy and gradually add the condensed milk.
  • As for the cream, I will say - we choose to your taste and preference. My household likes fatty and sweet creams. Can be completely replaced with sour cream and custard.
  • Assembly:
  • Divide the cake into two parts and grease one of them over the filling, put the second cake on top, turning the filling inward. All! I immediately put everything in the refrigerator.

And poppy smudges - it's okay, if you add starch to the poppy filling, it will turn out too dense after baking. After baking, a thin crust forms on top of the proteins, it is soft inside, but does not stretch - this is what, I think, starch does, so that there is no toffee. And what crumbs did you try, why - the cake or the filling? And only anointed the cream on top, did not cut the baked cake into two parts and did not sandwich them with cream?

Yes, the meringue did not stretch, there was a crust on top, and under it was a soft mustache. And I tasted the crumbs without stuffing. My meringue in the oven increased a little and went over the edges of the cake, so I trimmed it a bit.
