Ingredients

Biscuit:
Eggs 2 pcs.
Flour 60 g
Sugar 60 g
Cream:
Butter 300 g
Sugar 235 g
Cream 35% fat 100 g
Vanilla sugar bag
Cocoa powder 35 g
Cognac 2 tbsp. l.
Filling:
Frozen cherries 300 g
or cherry compote 110 g
Glaze:
Chocolate 80 g
Butter 50 g
For decoration:
Grated chocolate (chocolate chip) 30 g
You will also need:
cornet with curly attachment
Springform cake tin, oiled and floured Ø 20 cm
preheat the oven to 200 gr. FROM

Cooking method

  • Biscuit:
  • Bake a regular sponge cake (for baking such a sponge cake it will take 20 minutes at 200˚C), cool.
  • Pour the cherry over with cognac and leave to defrost (if using frozen).
  • Cream:
  • For the cream, boil the syrup: mix the cream with sugar and vanilla sugar (or vanilla, like me), bring to a boil and cook until the sugar dissolves. Pour cognac on the surface of the finished syrup to make the syrup less sugar-free and leave to cool.
  • Beat the softened butter until it is almost white, add cocoa, and then gradually pour in the syrup, whisking thoroughly. Put a quarter of the finished cream in a cornet with a toothed nozzle.
  • Assembly:
  • Remove the sides of the split form and cover with foil. Assemble the mold and place the biscuit on the bottom.

  • Place the cherries on the biscuit, drizzle lightly with the remaining syrup.

  • Put half of the cream on top of the berries, pressing well, and then the remaining cream. Smooth the surface and put the cake in the refrigerator.

  • Glaze:
  • Melt the butter and chocolate together (do not overheat) and set aside two teaspoons in a small cornet.
  • Remove the ring from the mold, remove the film. Pour half of the icing onto the cake and spread. Allow the cake to cool in the refrigerator, then pour out the remaining icing and remove again to set.
  • Decoration:
  • Use the cornet icing to make the crow's feet pattern. Decorate the edges of the cake with cream and sprinkle the sides with grated chocolate. The cake is ready.
