Ingredients

Dough:
Big eggs 3 pcs.
Sugar 90 g
Flour 80 g
Cocoa powder 20 g
Oil 30 g
Cream
Chocolate 50% 200 g
Cream 500 ml
Sugar 50 g
Brandy (liquor) 2 tbsp. l.
Syrup
Water 60 ml
Sugar 60 g
Kirsch (cherry liqueur) 60 ml

Cooking method

  • Dough:
  • Turn on the oven at 180, grease the mold with oil, sprinkle with flour (I have a silicone mold, did nothing).
  • Separate the whites from the yolks, melt the butter.
  • Mix flour and cocoa, sift 3 times to prevent cocoa from forming lumps.
  • Beat the whites until a thick foam (mass), continuing to beat in small particles, add half the sugar.
  • Beat the yolks with the second half of the sugar until the mass lightens and doubles in volume.
  • Pour the yolks over the whites and mix gently with a spoon (so that the volume does not fall).
  • Sift flour with cocoa onto the egg mass again and mix gently with a spoon (do not forget about the volume).
  • Pour the melted butter onto the mass and mix gently again.
  • Pour the dough into a mold (I have a diameter of 24 cm) and bake for 30 minutes.

  • Check with a toothpick to keep it dry.
  • Remove the cake from the oven, let stand for 10 minutes in the tin, then remove to cool.
  • Cream:
  • Whip the cold cream until there are firm marks from the mixer, which will hold their shape, but disappear after 10 seconds.
  • Add sugar and beat until mixer leaves a firm residue that will hold its shape (but not interrupt).
  • Put in the refrigerator.
  • Melt the chocolate. Grind into small pieces and covered in a microwave oven for 2.5 minutes at 700 W, then stir until smooth (or melt in a steam bath).
  • Add 1/3 of the cream to the chocolate and stir until the mixture is smooth.

  • If you add rum, liqueur, then add at this moment.
  • Add the rest of the cream and mix gently with the chocolate mass so that the volume does not fall.
  • Cake Black Forest or Selva Negro
  • If you do not use the cream, then put it in the refrigerator.
  • Syrup:
  • Boil water, add sugar.
  • Cook for 5 minutes.
  • Remove from heat and allow to cool.
  • Add brandy, liqueur and stir.
  • Collecting:
  • Cut the cake into 3 parts.

  • Next, soak the cake with syrup and spread half of the cream.
  • Cake Black Forest or Selva Negro
  • Then again the cake, syrup, the rest of the cream and cake.
  • Cake Black Forest or Selva Negro
  • The cake is ready.

Note

The cake is sweet but not sugary. Mega chocolatey and sooo delicious
