Ingredients

fresh yeast (pressed) 5 g
wheat flour 80 g
water 100 g

Cooking method

  • Dough:
  • Grind the yeast into small crumbs with your fingertips, mix with flour, add warm (37-40C degrees) water. Beat with a mixer for 1 minute at the lowest speed, and then another 3-4 minutes at a high speed. Tighten the container with dough with cling film and leave warm for 30 minutes.
  • Dough:
  • Dissolve granulated sugar and salt in warm milk, pour milk into the dough, add flour. Knead the dough, add butter after five minutes from the start of kneading. The finished dough does not stick to your hands, the walls of the bowl or bowl are clean. Leave the dough to ferment for an hour and a half.
  • Put the dough on the table, knead and let the preliminary proofing for 5 minutes, then roll it into the "tongue" and form a bar or oval bread. Transfer the finished dough piece to a baking sheet lined with baking paper, seam down. Cover with foil and let it stand for 1-1.5 hours at room temperature until it doubles (it took me 1 hour at this stage).
  • Before planting in the oven, grease the bread with milk, make 3-4 oblique cuts, while holding the knife at an acute angle to the bread (to the horizontal of the table).
  • Bake bread with steam for the first 7-8 minutes at a temperature of 230C (convection 210C) degrees, then 15 minutes at 210C (convection 190C) degrees, then bring the bread to readiness at a temperature of 190C (convection 170C) degrees. The total baking time is about 35 minutes, be guided by your oven!
  • Put the finished bread on a wire rack and let it cool completely.
