Apple caramel pie

Ingredients

Sugar 250g
Eggs 2 pcs + 4 yolks
Flour 300g
Cream, fat 33% 300ml
Butter 150g
Medium apples 8 pieces (I took 5 pieces)
Vanillin on the tip of a knife

Cooking method

  • 1. Sift flour into a bowl, add 100 g of sugar and chilled butter and vanillin, cut into small pieces. Stir with your hands until bread crumbs.
  • Drive 2 eggs one by one into the dough. Knead until the dough is smooth. Roll the dough into a ball, wrap in plastic wrap and refrigerate for at least 1 hour.
  • 2. Roll out the dough into a thin layer on a floured work surface. Lay in a round shape so that there are sides.
  • Make several punctures in the dough with a fork. Put the mold in a preheated oven to 180 degrees for 15 minutes. Remove from oven and allow to cool.
  • 3. Cut the apples into quarters and remove the core. Cut the apples into slices. Pour the remaining sugar into a saucepan, put on medium heat and cook until it turns dark brown. I added a little water to the sugar to make a syrup. Put the apples and cook, stirring constantly, for 3 minutes. I cooked longer. Remove the stewpan from heat. Put the apples in a sieve (I used a colander). Shake the sieve a few times over the caramel saucepan so that the glass has as much juice as possible.
  • 4. Spread the apples into a fan on the dough.
  • 5. Pour the cream into the saucepan where the apples were prepared and mix thoroughly with the juice and the remaining caramel. Let cool slightly. Beat the yolks, gently add the creamy mixture into them.
  • 6. Pour the creamy egg mixture into the apple mold. Place the pie in the oven for 40 minutes.

Can you replace the cream with something? Sour cream or milk?

Elena Bo, I think it's better not to experiment, it's better to use heavy cream after all. Sour cream will probably curl up when baked.
