Ingredients

Dough:
dry yeast (saf moment) 1 g
wheat flour 125 g
water 125 ml
Dough:

water 100-120 ml
salt 1 tsp
sugar 60g
vegetable oil 70 g
Filling:
poppy 200 g
granulated sugar 100 g
Additionally:
sweet strong tea 3-4 tbsp. l
powdered sugar for serving

Cooking method

  • Dough:
  • Mix flour with yeast, add warm (40C degrees) water and knead the dough. Tighten the container with the dough with foil and leave it on the kitchen table for 8-10 hours (at a temperature of 24-28C degrees).
  • Dough:
  • Dissolve granulated sugar and salt in warm water (40C degrees), pour into the dough.
  • Add flour mixed with yeast and knead into a soft, non-sticky dough (at this stage, the dough took 120 ml of water). Knead the dough until smooth, smooth (kneaded in a bread maker in the "pelmeni" mode). Leave the dough to ferment for an hour and a half.
  • While the dough is fermented, cook stuffing: Put poppy seeds in hot water, let it boil for 8-10 minutes, discard on a sieve and let it drain. Add granulated sugar, stir. Pass through a meat grinder or blender if desired.
  • Lightly dust the table with flour, lay out the dough, knead and let it rest for 10-15 minutes.
  • Divide the dough into two parts, each of which is rolled into a layer 3-4 mm thick. Lay out the filling, not reaching one edge (towards which you will fold 2-2.5 cm). Wrap the edges of the dough, those that will be the ends of the roll, over the filling (2 cm), roll the rolls along the long side, put on a baking sheet lined with baking paper, cover with loose foil. Proofing - at least 1 hour, until the rolls increase in volume at least twice. Before sending to the oven, grease the rolls with sweet strong tea, make punctures or shallow cuts so that the rolls do not burst during baking.
  • Bake with steam at 220C (convection 200C) for the first 8-10 minutes, then at 200C (convection 180C) degrees until cooked for about 25-30 minutes. The baking time depends on the oven, my total baking time was 40 minutes.
  • Let the rolls cool. Sprinkle with icing sugar before serving. Enjoy your tea!
