Sweet open pie with cherries and plums

Ingredients

Flour 450-500 gr.
serum 300 gr.
margarine 30-50 gr.
sugar to taste 1-2 glasses
salt 1 teaspoon
vanillin 1/2 sachet
yeast (100 gr. pack) 1/4 pack
sunflower oil 0.5 cups
cherry and plum ice cream 0.5 + 0.5 kg.
for sprinkling fruit cinnamon 2 teaspoons
nutmeg and sugar taste
egg to grease the cake on top

Cooking method

  • First, we make a dough:
  • 200 gr. flour + all whey (whey should be lukewarm, so that the yeast disperses well in it and the reaction we need is more likely to occur) +1/4 yeast sticks + 2 tbsp. tablespoons of sugar + a pinch of salt.
  • Knead ... I do it with a combine at 2 speeds, mix until smooth ... Cover with cling film. When the dough rises exactly two or three times, starts bubbling and sinks, it is ready to stir the rest of the ingredients ...
  • Domes:
  • Directly into the bowl of the food processor, at second speed, with a whisk for mixing the products (while our dough is still liquid), pour in the sunflower oil, throw in the vanillin, add the rest of the salt and sugar (if you like sweeter dough, add more sugar) according to the recipe with continuous stirring. We heat the margarine, just so that it is not hot, but also warm, like our whey, we pour into the bowl. Stir until smooth, until bubbles appear.
  • We change the whisk to a hook for kneading the dough. And we begin to add the pre-sieved flour in portions, knead until homogeneous, until the dough begins to separate from the walls of the bowl and does not stick. It should be very soft, elastic and, when pressed with a finger, put a dimple. The dough is ready.
  • Then you need to let him come up. Better to let it come up several times. I leave it right in the mixer bowl, covered with cling film.
  • I let you come up twice, I crush. Then cut at your discretion. You can bake rolls, bagels, rolls with poppy seeds, open pies from it, you can bake kulebyaki (after reducing the amount of sugar).
  • After it has been cut into the finished product, put it in a preheated oven to 50 degrees for proofing, for 40-50 minutes, then sharply increase the temperature to 200 degrees. Another 30-40 minutes and your pie is ready.

This is not so, in the recipe I have given, the dough is moderately sweet, there are also sour fruits and plums and cherries, so everything will be compensated. The taste of the finished product is sweet and sour.
I used a glass of sugar for everything about everything, so I wrote that whoever wants it even sweeter, add more.

For my taste, 400 grams of sugar for a two-kilogram pie is not much at all. Rather few. Better tell, oriana, what did you do with frozen fruits: first defrost, drained the juice, etc., or put the frozen ones in the cake, or did something to prevent them from flowing?

About frozen fruits. I defrosted everything on a strainer, let it drain. I had cherries in their own juice ... it must be well drained.
Then I blotted the moisture with a napkin, then put the whole thing on the dough, sprinkled it with a little starch with flour and cinnamon with sugar and nutmeg.
