Negro Smile Cake

Ingredients

Cakes:
Milk 0.5 cups
Cocoa 3 tbsp. l.
Chocolate 100 g
Yolk 3 pcs.
Sugar 0.5 cups
Soda 0.5 tsp
Baking powder 1.5 tsp.
Sour cream 200 g
Flour 1 ~ 1.25 cups
Vanillin
Meringue:
Protein 3 pcs.
Sugar 1/2~2/3
lemon juice a few drops
Cream:
Fresh cranberries 1 cup = 150g
Powdered sugar 2 tbsp.
Butter 250 g
Glaze:
Milk 1/3 cup
Sugar 1/3 cup
Cocoa 1 tbsp. l.
Chocolate 50 g

Cooking method

  • I didn’t find anything like that on our website, so with great gratitude I used Irina Kutova's recipe for 🔗 ... I did it practically unchanged, observing all the technology.
  • Cakes:
  • In a small saucepan, stir cocoa with milk, bring to a boil, add chocolates, heat with stirring until it is completely dissolved. Grind the yolks with sugar, vanilla, baking soda and baking powder until whitening. Stir in sour cream and cooled chocolate mass. Add enough flour to make a thick, difficult-to-flow dough. From the dough, bake 2 cakes d = 24-26cm, bake for 10-15 minutes at t 180-200 C.
  • Meringue:
  • Beat the cooled egg whites with sugar into a firm foam. Add a few drops of lemon juice at the end. Put the mass in a plastic bag, cut off the corner and squeeze out onto baking paper in the form of a circle = d cakes. Dry meringue at t = 60-80 С until hard.
  • Cream:
  • Beat the cranberries in a blender with powdered sugar and leave for a while to dissolve the sugar (I beat, squeezed the mashed potatoes, then added sugar). Beat the softened butter with a mixer, then gradually, in a few spoons, add cranberries and beat well each time.
  • Glaze:
  • In a saucepan, mix sugar and cocoa, pour in milk and stir well. Bring the mass to a boil and complete dissolution of sugar, add chocolate, stir. Cool to room temperature.
  • Assembly:
  • Soak the cakes with syrup (the rest of the cranberry mass + 1/3 cup of water + 1 ~ 2 tsp brandy). Put half of the cream on the first cake, put the meringue cake, the second half of the cream and cover with the chocolate cake. Grease the sides with the remaining cream and sprinkle with cocoa. Pour the icing on top.

Note

I made this cake in the shape of a smile, 21x40 cm. I took one and a half portion. She baked with one cake and then divided it in half. The height of the cake is 3.5 cm, weight is 980g. It was baked for 1 hour and 10 minutes. - probably this is my oven. I did the meringue for the first time, I was very afraid to dry it out so as not to turn yellow, so I dried it for almost 10 hours. I did not water it with glaze, since there was a mastic coating.
I liked the combination of sweet meringue and sour cream very much. For my taste, the meringue layer can be made thinner, and the cream thicker.
The cake was cut well, the meringue almost did not crumble. Enjoy your tea.

This is a "potato" - it formed the bulges of the "sponges", because the cake was Smile, and in a regular cake "potatoes" are not needed :)

The longest is the meringue, but I did it in advance (so that there was time to remake, if that ...), and even for the first time, those who are friends with meringues will be much faster. Are the cakes long? - so according to the recipe two, and I have one for one and a half serving, maybe that's why it takes longer. In general, I am very pleased with the cake (taste).
