Ingredients

Wheat flour 1 grade 400g.
Dry instant yeast (Saf-moment) 3d.
Salt 5d.
Sugar 20g.
Water 250g.
Margarine 8d.

Cooking method

  • Heat the water to 45C. Pour in half the flour and all the other products on the list (yeast, salt, sugar, margarine). Beat for 4 minutes on medium speed. I whipped with knives in a food processor.
  • Pour the beaten dough into the rest of the flour, stir with a spoon until smooth, cover and leave to swell for 20 minutes.

  • Roll the dough into a ball, place in a greased container, cover and leave to ferment at room temperature for 30 minutes. Next, stretch the dough into a layer and fold it three times and three times again. Return to container and leave for another 30 minutes. Then repeat the folding procedure and leave the dough for 90 minutes. In total, the fermentation time is 2.5 hours.
  • Then divide the dough into 2 portions, shape them into rectangles and leave them alone for 5-10 minutes. Then roll out, twist loosely into bundles. Lay the plaits on top of each other (cross to cross) and twist the braid from the middle to the end. Pinch the edges. Sprinkle generously with flour, cover and leave at room temperature for 40-50 minutes. I covered with a duckling, also baked sweat.
