Ingredients

Dough:
Flour 400 g
Margarine 200 g
Sugar 100 g
Yolks 3 pcs.
Sour cream 4 tbsp. l.
Baking powder 1 tbsp. l.
Soda 1 tsp
Cocoa 2 tbsp. l.
Thick plum jam, apricot 2 glasses
Walnuts 150 g
Protein foam:
Protein 3 pcs.
Sugar 100 g
Lemon acid pinch
Cream:
Cream 33 - 35% 300 ml
Butter 200 g
Condensed milk boiled 380 g

Cooking method

  • Dough:
  • In sifted flour mixed with loosening agent, rub the margarine on a coarse grater (I kneaded the margarine right in the flour with my hands until it crumbs). Add yolks whipped with sugar, sour cream and knead the dough. Divide the dough into three parts, put two in the refrigerator for an hour, and in the third, thoroughly knead the cocoa and divide into two parts, which are put in the freezer for 15 minutes.

  • Prepare a baking sheet, cover it with baking paper, I had a size of 30x25 cm.We roll out the white dough thinly and spread it evenly on a baking sheet, on top of it a thick jam (I had Plum and apple jam) and cover with protein foam (if you bake two cakes alternately, then prepare protein foam separately for each cake).
  • Protein foam:
  • Beat the whites with sugar, add citric acid and spread on the jam, sprinkle with nuts on top and grate the black dough.
  • It is very difficult to apply proteins and spread them, the jam stretches, so it would be better to do it all from a pastry bag without a nozzle, lay the spirals randomly and that's it!

  • We bake the cake at 180-200⁰ С, about 40-50 minutes, until the cake is golden brown. Maybe less - focus on your oven !!!!!! I blushed too much - I had to get it earlier!

  • Beat the cream until firm peaks and leave at room temperature. Separately beat the softened butter and add there, without stopping whipping, first at low speed for stirring, and then, at high speed - boiled condensed milk. Combine gently with cream. And beat again.

  • After I baked the cakes, it seemed to me that the height of the dancer would not be high, and I cut the baked cakes, the size of which was 30 x 25 cm, into two parts, but not equal, but 20 x 25 and 10 x 25 cm. When assembling the second cake, I had two pieces measuring 10 x 25 cm, that is, the dimensions of the assembled cake are 20 x 25 cm.
  • Therefore, next time I will divide the dough into four parts (3 white and 1 dark) and bake 3 cakes.
  • Regarding the cream, my household loves oil creams, so I made this one. In most cases, custard is used when assembling dances.

  • Nothing special, cream-cake, etc. The only thing is that I turned the top cake over and put it flat side up.

Although we are very fond of such hard ones (Napoleon, crispy with butter, is generally our favorite). It turns out very satisfying!

I always, if the recipe says soda, replace it with baking powder. Only I take it 2 times more than soda.

I also know such a recipe. But in a slightly different sequence. Indeed, it is not easy to spread the whipped egg whites over the jam. So, in my recipe there is such a sequence in the cake: light dough, jam, grated dark dough, protein layer. Maybe someone will come in handy.
And the cake is very tasty, but you need to bake it in advance so that it is soaked for at least a day.
