1. Knead in the "Dough" mode, at the end of the program you can remove the spatula, let the dough come up, and then turn on the baking mode.
2. Start the complete process without removing the paddle.

For a muffin or muffin you need, in my opinion, ordinary white flour ... Programs - depending on what type of muffin you bake. Look for recipes in the recipe section.

In my opinion, and in the opinion of many experienced bakers, it is better to bake such a thing as a muffin in the oven in a muffin tin. The same is true for butter dough.
