Ingredients

Dough:
dry yeast (saf-moment) 4 g (2 tsp)
water 300 ml
wheat flour 200 g
Dough:

wheat flour 300-330 g
granulated sugar 50 g
salt 1.25 tsp
vegetable oil (odorless) 60 g
Additionally:
sesame 3-4 tbsp. l
sweet tea 2 tbsp. l

Cooking method

  • Dough:
  • Mix flour with yeast, add warm water (38-40C degrees) and beat with a mixer at low speed for 4-5 minutes. Tighten the container with dough with cling film and leave in a warm place for 20 minutes.
  • Dough:
  • Add vegetable oil to the dough, mix.
  • Mix the flour (it took me 300g) with salt and granulated sugar, add to the dough and knead the dough. As soon as the flour is evenly moistened and the dough "grabs" into a single lump, stop kneading and leave for 20 minutes, and then knead until elastic, smooth. I kneaded the dough in a bread machine in the "dumplings" mode. After 10 minutes, the batch was stopped, paused, and then completely kneaded in the same mode (20 minutes).
  • Leave the dough to ferment for 90 minutes, with two wipes, every half hour.
  • Put the finished dough on the table, knead, cover with foil and let it rest for 10 minutes.
  • Divide the dough into 8-10 pieces (divided into 8 pieces, 112g each), shape into round buns and place in a baking dish or baking sheet lined with baking paper. Proofing - 1 hour under plastic wrap.
  • Before baking, gently grease the buns with sweet tea and sprinkle with sesame seeds (I had a ready-made cereal mixture of flax seeds, sesame seeds and sunflower seeds).
  • Bake with steam at a temperature of 220C (convection 200C) degrees, after 7 minutes reduce the temperature to 200C (convection 180C) degrees and bake the rolls until cooked for another 15-20 minutes. The baking time depends on the oven, my total baking time was 35 minutes.
  • Put the finished buns on a wire rack and cool.
