Yogurt bread without kneading (in the oven)

Ingredients

Wheat flour (I have "general purpose") 300g.
Whole grain wheat flour 100g.
Natural yoghurt 3.5% fat 400g.
Salt 10g.
Dry instant yeast (I have a saf moment) 1d.

Cooking method

  • Mix all ingredients by hand in a container. The dough is sticky, rather tight. Cover with a lid and leave at room temperature for 10-12 hours. Dough at the beginning and end of fermentation:

  • In the morning, knead, form a loaf. If necessary, dust the table with flour. Place in a proofing basket, seam up, sprinkle with flour, cover and leave for 60 minutes.
  • Preheat the oven with a stone to 250C (230C convection).
  • Before baking, cut the workpiece, sprinkle with water.
  • Bake the first 10-15 minutes at 250C (230C), then lower the temperature to 220C (200C) and bake until tender.
  • The exact time depends on your oven. I have 30 minutes.
  • Cool on a wire rack under a towel.

Added a little "gag", a little rye flour and, due to the complete absence of whole grain flour, replaced it with wheat + wheat / Nordic flakes.
