Shortbread cake with walnuts

Ingredients

Dough:
butter 200g
granulated sugar 90g
yolks 3 pcs
wheat flour 350g
sour cream (or milk) 2 tbsp. l (3 tbsp. l)
salt pinch
baking powder 1 tsp
Filling:
proteins 3 pcs
powdered sugar 120 g
walnuts 180 g
Glaze:
butter 50 g
chocolate 50 g

Cooking method

  • Dough:
  • Grind softened butter with granulated sugar and yolks.
  • Stir the flour with salt and baking powder, sift into the butter and egg mass, add sour cream (or milk) and quickly knead the dough.
  • Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  • Filling:
  • Set aside several halves of walnuts for decoration, chop the rest of the nuts into small crumbs with a blender.
  • Whisk the whites until soft, firm peaks, add the icing sugar and beat again until "glossy". Add ground nuts and stir (with a spoon).
  • Cover the bottom of a split baking dish (24-26 cm) with paper, grease the sides with a little butter.
  • Divide the finished dough in half and divide one part in half again.
  • Dust the baking paper or silicone mat with a little flour and roll out most of the dough into a layer (mold diameter + sides) and, without removing from the base, turn into a baking dish, straighten and make the sides 3-3.5 cm.If the dough breaks - connect the break points directly in the form.
  • Lay out half of the filling.
  • Roll out the next part of the dough to the diameter of the mold and place over the filling.
  • Lay out the remaining filling.
  • Roll out the last part of the dough, put on the filling, pinch the edges.
  • Bake in an oven preheated to 180C (convection 160C) for 30-35 minutes until golden brown. The toothpick comes out of the finished pie dry.
  • Remove the finished cake from the oven, let cool slightly and put on a dish.
  • Pour icing over the completely cooled cake. For the glaze, melt the pieces of butter and chocolate together, stir until smooth.
  • Have a nice tea!

For me, this cake is the taste of childhood. Once such a cake was baked by my friend's mother, it was her signature recipe.
