Cooking method

  • I want to be clear right away: classic khinkali are made from beef and lamb. This is my beef and pork version.
  • I kneaded the dough on a Bosch MUM86 combine from the first four ingredients. It took about 10 minutes. While the dough was kneading, minced meat was prepared in a Moulinex meat grinder from beef, pork and onions. Salted, peppery and chopped greens added.
  • I folded the dough in a film and kept it for 10 minutes. At this time, I installed the rolling attachment on the combine. I rolled out the dough once for 1, 2, 3, 4, 5. For khinkali, rolling out for 5 is quite enough. The width of the roll is enough to cut 2 circles in a thin glass in one row.
  • In the middle of each mug of dough, I put minced meat and covered it up like a dumpling. You can choose another shape of the seal, who likes what.
  • Boiled in salted water with bay leaves and peas. That's all!
