Ingredients

smoked bacon 2 pack. 200 g each
hard pear komis or bartlett 1 large
dry porcini mushrooms 10-15 g
raw hazelnuts 50 g
lemon quarter juice
butter 4 tbsp. l
parsley 1 bundle
salt, white pepper taste
For the sauce
butter 100g (I have 50)
fat cream 200 ml
dry white wine 0.5 st
shallot 2 pcs
garlic 3 cloves
thyme 2 twigs
cayenne pepper (unused) salt taste

Cooking method

  • I have been staring at this recipe from the magazine "Best Holiday Dishes" for a long time. And now we managed to cook ... I hasten to share on the eve of women's day - suddenly one of our men will deign to cook for his beloved. This is delicious! And also unusual - the beloved will be happy.
  • You can cook together: one will make the sauce and the filling, and the other will do the rest (I even guess who will be the other!).
  • First, let's prepare the filling.
  • 1. Soak the mushrooms for 2 hours. Then take it out of the infusion, rinse it and cut it into thin strips.
  • 2. Then heat the hazelnuts on a baking sheet at 170 * C, for easier peeling, place the hot hazelnuts in a kitchen towel, wrap and shake vigorously.
  • Next, chop the hazelnuts - one part finely, the other coarsely.
  • 3. Cut the peeled pear into cubes and finely chop the parsley (without the stem).

  • 4. Heat 2 tbsp in a frying pan. l butter, fry the mushrooms for 6-7 minutes over low heat, add the remaining butter and pear cubes, heat up and remove from heat.
  • Add all the hazelnuts and parsley, season with salt and pepper and cool. It is not indicated in the recipe what to do with lemon - I added it to the filling ...
  • 5. Stuff the peeled fish with the filling, wrap it in strips of bacon (The fish is large, bacon is very difficult to fix).

  • 6. Fry the fish in bacon on one side (2 min.) In a very preheated frying pan. Transfer the prepared fish to a baking sheet lined with parchment.
  • 7. Preheat the oven to 160-170 * C ("convection + grill") and bake for 20 minutes. I did it on "convection" for 35 minutes.
  • 8. While the fish is cooking, prepare the sauce for it.
  • In a saucepan with a thick bottom, melt the butter and fry the chopped onion and garlic over low heat, add thyme and cayenne pepper. Next, pour in the wine, evaporate it by half. Then add the cream, reduce the heat and heat the sauce.

Have a helper prepare some of the filling and sauce while the mushrooms are soaking. And then it's easy. You can even fry the bacon separately if the fish is large and there is not enough bacon throughout the carcass.
In short, take a chance and let everything turn out smartly and quickly!
For just one exclamation: "It's better than in a restaurant!", You can waste time ...

Of course, it will be great if the men help cook! And I am already grateful to my husband only for his such sincere delight!

I prepared, as promised, river trout (it was in the original recipe). Only I did not take out the ridge with the bones, since the fish was already gutted and there was no point in cutting it from the back. It is very difficult to find a trout with a belly, unless you catch it yourself ...
