Egg Tortilla Patchwork

Ingredients

wheat flour 350 g
milk 170 ml
egg yolks 2 pcs
butter 30 g
light molasses 2 h l
salt 1 tsp
fresh yeast 8 g
sesame seeds black and light, kalonji for sprinkling

Cooking method

  • 1. For dough, mix yeast with 100 ml of warm milk and molasses, combine with 100 g of flour and leave for 30 minutes.
  • 2. Mix the remaining flour with salt, milk with yolks. Combine the finished dough with flour, pour in the milk-egg mixture and knead at medium speed for 5 minutes. Then let the dough rest for 3-5 minutes, add butter, melted and cooled to room temperature, and knead everything together for another 10-12 minutes. Round the finished dough and leave to rise for 60-75 minutes.
  • 3. Put the dough on a cutting mat and gently stretch it into a rectangle about 1.5-2 cm thick, then fold it in an envelope and let it rest for five minutes.
  • 4. Line a baking dish with baking paper and transfer the dough into it and stretch with your hands so that the bottom is completely covered. Leave to rise for 30-40 minutes (until it doubles in volume). Then with a sharp knife cut the dough almost to the bottom, grease with milk and sprinkle with sesame seeds (add kalonji to black sesame seeds). Then grease with milk again and put in an oven preheated to 220 C.
  • Five minutes after the start of baking, lower the temperature to 180C and bring the cake to readiness (in my oven it takes 15-20 minutes).
  • 5. Remove the finished cake from the mold and cool on a wire rack.

Note

The tortilla is fluffy, with a flaky crumb and a crispy crust.
