Cooking method

  • Based on the recipe of the same name from Good Cook. I have been staring at this cake for a long time, because I love "Omichka" cheese. The cake met all expectations, the soufflé tastes like bird's milk. But it prepares many times faster. At the same time, I decided to try out a new biscuit recipe.
  • Biscuit:
  • To prepare a biscuit, it is necessary to separate the whites from the yolks. Beat the whites into a strong foam. Beat the yolks with ahar until fluffy, without stopping whipping, pour in 6 tbsp. l. boiling water. Beat until smooth. Sift flour with baking powder and cocoa to the yolks (I added 1 tablespoon of cocoa, if you add more, you need to reduce the amount of flour). Stir until smooth. At the end, stir in the whipped egg whites.

  • Grease the sides of the mold with oil, put baking paper on the bottom. Bake the biscuit until tender.
  • Cool the sponge cake, put it out of the mold and cut into two parts. Cover the form with cellophane or cling film. Lay out the biscuit cake.

  • Gelatin (I used Dr. Ocker, I liked it very much) pour cold water, let it swell. Beat the cream with sugar, when the mass increases in volume and thickens well, add the curds and beat again. The mass will become a little liquid, put it in the refrigerator for 15 minutes. Then take out, beat again until thick. Add the loose gelatin to the souffle, mix well.

  • Pour the soufflé into a mold on the cake.

  • Cover with the second crust, press the crust lightly into the cream.

  • Put in the refrigerator until the soufflé hardens.
  • I stood for about 2 hours. After the time has passed, remove the cake from the mold.
  • Decorate as desired.
  • To decorate the sides of the balls - grind the dry breakfast in a blender.

  • Press the resulting crumb to the sides, sprinkle the top with powdered sugar. Decorate with beads, mastic flowers.

Note

I liked the biscuit, the only thing would be to reduce the amount of flour and sugar. You can bake a biscuit in the classical way, I think it will be no worse.
Making the cake is very fast.
