Ingredients

wheat flour 1 multi-glass (160 ml)
granulated sugar 1 multi-glass
eggs 2 pcs
a mixture of dried fruits and nuts 2 multi-glasses
vanilla sugar 1 sachet
cinnamon, cloves, ground zest, other spices to taste and desire

Cooking method

  • The cake is simple and quick to prepare. Beat 2 eggs with a whisk or mixer with sugar and vanilla sugar. Add ground spices, I put about 1 tsp. those that remained with me from the Old Polish Gingerbread.
  • Add flour, mix until smooth. Dried fruits and nuts (I had dried apricots, raisins, almonds and walnuts, nuts about the same volume as fruits) are not ground very finely in a chopper. Add to the dough, mix well.
  • We heat the Orion pancake maker, grease the heating surface with a napkin dipped in olive oil, and pour into each depression a large tablespoon with a slide of dough. Close the pancake maker and cook for 5 minutes. Carefully remove the cake with a spatula and put it on the wire rack to cool. The cake will be soft at first, when it cools down - it will be covered with a crispy, not hard crust, such as that of fresh macaroons. Before placing the next portion, wipe the surface of the pancake maker with an oil napkin to remove the adhering remnants of the previous cookies (there will be such a barely visible stick), and spread 2 more spoons of dough. We wipe the pancake maker every time.

These cakes can also be baked in the oven. Put on oiled baking paper and put in the oven (160-180 degrees) for 15 minutes (be guided by your oven). Remove from paper as soon as it is baked, otherwise it will freeze up tight!
And if you are too lazy to make cakes, you can put everything in a slow cooker and put it on baking. I have a small cartoon (2.5 liters), yesterday I baked this gingerbread for 65 minutes. How much will be baked in a large one - I will not say, but I think that it will be as much as you bake an ordinary charlotte.
