  • Much has been written about the leaven, but I still want to remind you that you need to spend several days to get the leaven. I managed to bake the first bread on the 5th day. On the first day, mix water at room temperature and rye flour (one to one, for example, 100 ml of water -100 ml of rye flour). We put it in heat, for example, to the battery, but we make sure that the temperature does not exceed 28 grams. Stir periodically throughout the cooking time (about 3 times a day). On the second day, feed the sourdough with rye flour and warm water (the same amount as on the first day). The first small bubbles appear, the smell does not change. On the third day, fermentation begins, we feed again, as on the first day, we can increase the amount of additive, say, up to 200 by 200. As a result, by the end of 4 days, the good leaven all in loose bubbles has risen, we feed it again, and in the morning we bake delicious black bread. Remember never to close the starter jar tightly! Store the starter in the refrigerator in a fruit bowl. When it is needed, we take it out, feed it, leave it for 1.5 -3 hours.   • As for the actual baking of bread, everything is very simple. We lay the products in the order as written. Once I put the sourdough in the water, as a result, the bread did not rise and did not bake. Pour yeast over the sourdough.
