"Beluga" vegetable stew with lentils

Vegetable stew with lentils Beluga

Ingredients

zucchini (medium) 1 PC
eggplant (medium) 1 PC
onion (medium) 1 PC
Bulgarian pepper 1 PC
tomato 2 pcs
lentils 100 g
tomato juice 100 ml
garlic 2-3 cloves
salt, pepper, sugar taste
dry basil 0.5 h l
ground chili pepper (optional) on the tip of a knife
fresh parsley 5-6 branches
olive oil for frying 2-3 tbsp

Cooking method

  • 1. Cook lentils. Blanch the tomatoes in boiling water, peel, remove the seeds and cut into small cubes.
  • 2. Cut all remaining vegetables into medium-sized cubes and fry one by one over high heat until light golden brown.
  • 3. Mix the fried vegetables with the lentils and put them in a baking dish, add the tomatoes, pour in the juice and put in the oven preheated to 180C for 15-20 minutes. About five minutes before the end of cooking, add salt and all the spices, finely chopped garlic and parsley.

A very light, but at the same time satisfying dish. It cooks very quickly, however, it is eaten even faster. Both fresh and frozen vegetables can be used to make this stew. Serve as a side dish for meat, and as an independent dish.
