Muffins with spinach and feta

Ingredients

Wheat flour, premium 460 g *
Sugar 75 g
Baking powder 2 tsp
Paprika 1 tsp
Salt 3/4 tsp
Milk 100 ml
Vegetable oil 75 ml
Eggs 2 pcs
Spinach leaves 240 g
Chees Feta 100 g

Cooking method

  • Finely chop the cheese and spinach leaves.
  • Sift flour with baking powder into a bowl, add salt, sugar, paprika. Mix.
  • In another bowl, mix eggs, butter, milk. Add spinach.
  • Combine wet and dry ingredients, avoiding excessive mixing. Enough so that no dry flour remains.
  • Add cheese last.

    * Flour must be reduced! Moreover, at least 2 times. The cupcakes are dry! And who publishes such unverified recipes. The idea is good, but the final product is insulting
    I baked them again, took half of the flour prescribed in the recipe ... and even that is a lot.

    200 g frozen spinach (thawed)
    180 g feta cheese
    250 g flour
    3 tsp baking powder
    1 tsp salt
    1 tsp paprika
    2 eggs
    80 ml olive oil
    300 ml milk
    remove sugar altogether

Cupcakes are baked, but I don't know what will turn out - the dough turned out to be very thick. Made strictly according to the recipe. I sit, worry. In all the other muffins (and I make many different ones) the dough is far from so thick.

Cupcakes are finished. Conclusion - I like the general idea, I will repeat it, but next time I will take less than 400 g of flour and reduce the sugar - for me it felt too much, with spinach and feta I need half as much. thanks for the idea
