Beef in a crispy nut crust

Ingredients

beef (tenderloin) 1.5-2 kg
for the marinade:
bavarian mustard 2 tbsp
light honey 1 tbsp
soy sauce 2 tbsp
semi-sweet sherry 150-200 ml
mixture of four peppers, freshly ground 1 tsp
olive oil 2 tbsp
for the layer:
spinach 1 bundle
parsley 1 bundle
natural yogurt (thick) 2-3 tbsp
for crust:
walnuts 100 g
dried white bread 100 g
marjoram, thyme 1 tsp
Parmesan 50 g

Cooking method

  • 1. Prepare the marinade from the above ingredients, pour over the meat and leave to marinate for 12 hours.
  • Beef in a crispy nut crust
  • 2. Then put the meat in a baking dish (put a wire rack on the bottom) and put in an oven preheated to 180C for 30 minutes.
  • 3. Puree spinach and parsley and mix with yogurt. Grind nuts and bread into small crumbs, mix with dry herbs and cheese.

  • 4. Remove the meat from the oven, evenly grease the greens puree and place the nut crumbs on top. Return to oven for another 30-35 minutes.
  • Remove the cooked meat from the oven, cover with foil, let stand for fifteen minutes and serve.
