Ingredients

Chatterbox:
Wheat flour sun 200g.
Sugar 15g.
Dry yeast (I have a SAF moment) 7d.
Water 200g.
Dough:

Unfermented white malt * 17g.
Salt 20g.
Vegetable oil (I have sesame oil) 65g.
Water 400g.

Cooking method

  • Prepare yeast mash. Heat the water to 45C, add flour mixed with yeast and sugar. Beat until smooth, cover and leave warm for 30 minutes.
  • For the test, add all the ingredients. Knead in HP or in a combine at a minimum speed for 10-12 minutes. Leave on for 30 minutes.
  • Next, knead at high speed until smooth for 8-12 minutes. Leave in a bowl for 15 minutes.
  • Then put the dough on the table, greased 1/4 hour. l. butter, fold in an envelope, put in a container (6-7 liters) with the seam down, cover and leave until increased by 2.5-3 times (30-45 minutes at 30-35 C, or 1.5 hours at 25 C). My dough was filled with 6.5 liters. in 1.5 hours.
  • Then knead the dough, form a ball and leave for 15 minutes.
  • Divide into portions, shape buns (loaves can be used). I divided into 24 pieces. for 68g.
  • Proofing until doubled (about 40 min at 35C, 1 hour 10 min at 25C).
  • Sprinkle with water before baking.
  • Bake in an oven preheated to 200C until golden brown. The exact time depends on your oven. It took me 40 minutes.
  • Cool on a wire rack.
  • The buns turned out to be the most tender. You can see how airy the crumb is and how the threads stretch. I could not deny myself the pleasure of clicking.

Omela the buns are amazing. Has already baked 2 times. The first, as in the recipe, only fresh yeast and no malt. The second is made from mixed flour. I put the dough on whole grain flour and it stood in my refrigerator for 2 days. The dough was kneaded on premium wheat flour with the addition of a mixture of seeds for st. yeast and malt free. Kneading and proofing was done in a bread maker on the "dough" program. Everything worked out great.

Irina, white malt is added to flour to enhance fermentation activity. The principles of mixing in the HP and the combine are really different, but if there is no combine, then a longer mixing time in the HP will be enough for kneading.
