Ingredients

Dough:
Carrot 340 g
Eggs 3 pcs.
Sugar 2 / 3-1 Art.
Brown sugar 2 / 3-1 Art.
Ricotta 250 g
Walnuts 1/2 tbsp.
Odorless vegetable oil 1 tbsp.
Raisins 1/2 st
A pineapple 120 g
Flour 2 st
Soda 2 tsp
Baking powder 2 tsp
Cinnamon 2 tsp
Nutmeg 1/4 tsp
Salt 1/4 tsp
Glaze:
Softened butter 2 tbsp. l.
Cream cheese 125 g
Ricotta 125 g
Powdered sugar 0.5-2 tbsp.
Vanilla essence 1 tsp
Raisins and nuts for decoration

Cooking method

  • Unusually delicious cake! Carrots are not felt at all, they are prepared simply, eaten instantly ... Moreover, everyone likes them, without exception!
  • A recipe for those cases when there is no strength or reluctance to bake, something grand, but you want something tasty ...
  • So it happened with us ... New Year is on the nose, we ought to have something very tasty for tea, but who is sick, who has children ... (: But this recipe saved us ... We stuck candles into the finished cake , made wishes and blew them out with the whole family at once!
  • Dough:
  • 1. Prepare a muffin tin 25 cm in diameter. Grease with oil and sprinkle with flour.
  • 2. Heat the oven to 180C.
  • 3. Grate the carrots on a medium grater, measure out 2 glasses (tamped).
  • 4. Combine sifted flour, baking soda, baking powder, spices and salt.
  • 5. Mix 2 tbsp. l. flour mass with raisins so that it does not sink to the bottom of the cake when baking.
  • 6. In a separate bowl, beat the butter, ricotta and sugar until smooth.
  • 7. Add eggs one at a time to the butter mass, beating after each egg.
  • 8. Mix flour mass with butter (using a mixer at low speed).
  • 9. Add carrots, nuts, raisins and pineapples. Mix well.
  • 10. Pour into prepared mold and smooth the surface.
  • 11. Bake for 1-1.5 hours. Check readiness with a wooden stick.
  • 12. Spread glaze when cooled down.
  • Glaze:
  • 1. Whisk butter, cream cheese, ricotta and vanilla.
  • 2. Add the icing sugar in small portions to the desired consistency.
  • Carrot cake
  • Note:
  • 1. All rates are given for a metric cup, which can be replaced with a glass. The main thing is that everything is measured by the same volume.
  • 2. I reduce each cup of sugar to 2/3 cup and add more raisins and nuts (2/3 instead of 1/2).
  • 3. For icing, I only need one glass of powdered sugar. It seems to me that with 2 glasses it will be too sweet and very liquid. (We put only 0.5 cups of powdered sugar, and it was still very sweet).
  • 4. There is a lot of dough. Take a bigger shape. I have a mold Ø 26 cm.

Made a dietary change based on your recipe and one more Carrot cake from Emer Fallon

Not a drop of oil in the dough, everything (both ricotta and butter) was replaced with low-fat soft cottage cheese
A glass of whole grain flour and half a glass of rolled oats, coconut, almond flour.
Fillers - dried cranberries soaked in dark rum, canned pineapple without liquid, pecans
I put a lot of carrots - about 400 g
A little stevia instead of sugar.

It turned out 2 cakes, each cut lengthwise and layered, and on top spread 5% Philadelphia mixed with lemon juice, a little sweetened with stevia.

Mine are absolutely delighted. I made different carrot pies, muffins and cakes for them - this is the most successful
